Pronto Nacho Potatoes: A Family Favorite

My Go-To Comfort Food: Pronto Nacho Potatoes

As a busy mom of three, finding time to cook a delicious and satisfying meal can feel like a Herculean task. Weeknights are a whirlwind of homework, practices, and bedtime routines, leaving precious little time for anything beyond basic sustenance. That's where my Pronto Nacho Potatoes come in. This recipe is my secret weapon for a quick, easy, and incredibly flavorful dinner that the whole family loves. It’s adaptable, too – perfect for a simple weeknight meal or a fun, festive gathering.

The beauty of this dish lies in its simplicity. It starts with pre-sliced potatoes – a total time-saver! – which are tossed in a creamy, cheesy sauce. The sauce itself is unbelievably easy to whip up; just a few pantry staples come together to create a rich and satisfying base. I often use cream of mushroom soup, but feel free to experiment with cream of chicken or even a different soup base depending on what you have on hand (or what sounds good!). The addition of cheese elevates the dish to another level, offering that irresistible cheesy pull that everyone craves. The key is to use a good quality cheese for the best flavour.

I love to customize my Pronto Nacho Potatoes. Sometimes, they’re simply potatoes and cheese – a classic combination that always hits the spot. Other times, I go all out with nacho toppings: a sprinkle of jalapeños for a little kick, some crumbled bacon for extra richness, or even some finely chopped green onions for a fresh burst of flavour. The possibilities are endless! The kids love to help me with this part, making it a fun family activity. The recipe also gives us a great way to use up leftover cooked chicken or beef. A simple addition like this turns a standard meal into something extra special, and the children love the variety.

This recipe is more than just a quick dinner; it’s a testament to the fact that delicious food doesn’t have to be complicated. It’s a dish that celebrates the simple pleasures of good ingredients and satisfying flavors. It’s a recipe that’s helped me navigate the chaos of family life, one delicious, cheesy bite at a time. The leftovers are great cold too!

Beyond the Basics: This recipe is incredibly versatile. Feel free to experiment with different types of cheese, add your favorite spices or herbs, or try using different types of potatoes. For a spicier version, add a pinch of chili powder or cayenne pepper to the sauce. For a vegetarian option, simply omit the meat and add in your favourite vegetables.

Tips and Tricks for Success:

  • Pre-sliced potatoes are your friend: They save you a significant amount of time and effort.
  • Don’t be afraid to experiment with toppings: Get creative and add whatever you think would taste good!
  • Use good quality cheese: The flavor of the cheese will make a big difference in the overall taste of the dish.
  • If using salted butter, reduce the amount of salt accordingly: This will help avoid the dish becoming too salty.
  • Adjust the cooking time as needed: Every oven cooks a little differently, so you may need to adjust the cooking time slightly based on your oven.

Serving Suggestions:

  • Serve as a main course for a quick and easy weeknight dinner.
  • Serve as a side dish with grilled chicken or steak.
  • Serve as an appetizer at a party or gathering.

This Pronto Nacho Potato recipe is more than just a meal; it’s a memory maker, a comfort food staple, and a testament to the fact that simple recipes can be incredibly satisfying. Try it today, and I’m confident it will become a new family favourite!

Step-by-step

    • Preheat oven to 350 degrees.
    • In a saute pan, melt butter and whisk in flour, salt and pepper to taste at medium heat.
    • Continue to stir/whisk regularly while it comes to a boil and give it another couple of minutes to thicken nicely.
    • Stir in the soup and half the cheese (adding it all at once makes it too thick to stir).
    • Gently fold 1/2 of the potato slices (1 20-oz. package) to coat them with the cheesy sauce.
    • If not using Taco Cheese (a combo of Colby & Monterey Jack with seasoning already in the package), you will need to add some additional spices to jazz it up.
    • Add in the rest of the cheese and stir until cheese is melted.
    • Grease a casserole dish 10x13 or 11x13 and empty the other package of plain potatoes into the dish.
    • Pour the cheesy glop of potatoes on top.
    • Cover with foil.
    • Heat for 20-30 minutes at 350...to heat it through.
    • Remove foil and heat for an additional 10 minutes for some browning to occur.
    • Hearty appetites can add a dollop of sour cream or even guacamole.
