Crumbling the paneer, grating the khowa, and mixing the ingredients is a meditative process, allowing me to unwind and disconnect from the day’s stresses. The baking process itself is surprisingly easy. The water bath method ensures even cooking and a perfectly soft, melt-in-your-mouth texture.

The outcome? A stunning dessert that’s as beautiful to look at as it is to eat. The vibrant yellow color of the sandesh, flecked with the crimson of saffron, makes it a true showstopper. • Make a powder of the seeds of green cardamom.
    • Take fresh paneer in a plate and crumble it using your fingers.
    • Grate khowa and mix grated khowa with crumbled paneer.
    • Knead this mixture for 2-3 minutes or until smooth.
    • Add fresh cream to the mixture and knead again to mix properly.
    • Add powdered green cardamom and mix.
    • Add Sugar Free Natura's Diet Sugar to the mixture.
    • After mixing the diet sugar, add kesar and food coloring to the mixture and mix for 1 more minute.
    • Take a baking tin and rub a little ghee on the inner side of the tin.
    • Pour the sandesh mixture into the tin and cover it with aluminum foil.
    • Take another baking tray (bigger size) and pour water to 1/2 the level of the tray. Place the baking tin filled with sandesh mix in the middle of the tray containing water.
