Broccoli and Cheddar Stuffed Chicken: A Weeknight Winner

As a busy working mom, finding time to cook delicious and nutritious meals can feel like a constant uphill battle. Between juggling work deadlines, school pick-ups, and after-school activities, the thought of spending hours in the kitchen often feels overwhelming. That's why I'm always on the lookout for recipes that are both quick and satisfying, and this Broccoli and Cheddar Stuffed Chicken is a true game-changer.

The beauty of this recipe lies in its simplicity. It's a one-pan wonder, minimizing cleanup and maximizing flavor. The chicken breasts are butterflied, making them cook quickly and evenly. Stuffing them with a creamy broccoli and cheddar mixture adds a delightful burst of freshness and cheesy goodness that elevates the dish beyond the ordinary. I often double the recipe so I can have leftovers for lunch throughout the week – a lifesaver on those busy days when grabbing a quick bite is the only option.

Why this recipe is my go-to:

  • Quick and Easy: Preparation time is minimal, and the baking time is relatively short, making it perfect for a busy weeknight.
  • Delicious and Satisfying: The combination of tender chicken, creamy cheese sauce, and nutritious broccoli is simply irresistible. It's a well-balanced meal that keeps me feeling full and energized.
  • Versatile: The recipe can be easily customized to your liking. Feel free to experiment with different cheeses, add other vegetables, or serve it with a side of your favorite roasted vegetables.
  • Family-Friendly: My kids absolutely love this dish! It's a fantastic way to sneak in some extra vegetables without any complaints.

Ingredients you'll need:

The ingredient list is straightforward and contains common pantry staples. I usually have most of these items on hand, so it's a very convenient meal to prepare on short notice. Fresh ingredients always taste best, of course, but I’ve used frozen broccoli multiple times and the results are always amazing.

Preparation tips:

Butterfly the chicken breasts carefully to prevent tearing. Don’t be afraid to pound them slightly to ensure even thickness. The breading adds a delicious crispy texture to the chicken. If you want to keep it healthier, you can leave the breading process out. The cheese sauce is easy to make, but remember to stir constantly to prevent lumps. The oven temperature and baking time may need to be adjusted slightly based on your oven and the thickness of the chicken breasts, so always check to ensure the internal temperature reaches 160 degrees F before serving.

Serving suggestions:

This dish stands well on its own, but you can enhance the meal by serving it with a side of roasted vegetables, a simple salad, or some crusty bread for dipping in the delicious cheese sauce. It's also a great option for meal prepping. The leftovers taste just as good the next day, making it a perfect choice for lunch or dinner.

Beyond the everyday:

This Broccoli and Cheddar Stuffed Chicken recipe is far from ordinary. It's a versatile dish that can be easily adapted to suit any occasion. For a more elegant presentation, you can serve it on individual plates with a side of asparagus and a light vinaigrette. Or, for a casual gathering, serve it family-style with a big bowl of the cheesy broccoli sauce for everyone to enjoy.

This recipe has become a staple in my household. Its ease of preparation, delicious flavor, and nutritional value make it a perfect choice for busy weeknights or special occasions. Give it a try – I'm sure it will quickly become one of your family's favorites.

Step-by-step

    • Pre-heat your oven to 375 degrees.
    • Steam one bag of broccoli.
    • Butterfly the chicken by making a cut across the chicken horizontally almost to the other side (but not all the way through) using a very sharp knife. Then open the chicken like a book. Pound the chicken if necessary so that it’s about 1/4-1/2 inch thick.
    • In three separate shallow dishes, place flour in one, egg beaten with water in another, and panko bread crumbs in the last dish.
    • Take one piece of chicken at a time and lightly season each side with salt, pepper, and garlic powder. Place one tablespoon each of cheese and broccoli in the middle. Fold the sides of the chicken towards the middle and secure with toothpicks.
    • Dredge the chicken in flour, then egg, then panko bread crumbs.
    • Place each piece of chicken on a lightly greased baking sheet.
    • Bake in a 375 degree oven for 30-35 minutes or until temperature of chicken reaches 160 degrees.
    • While chicken is baking, prepare cheese sauce by melting 3 tablespoons of butter in a saucepan on medium heat. When butter has melted, whisk in 3 tablespoons of flour. Let it cook for about a minute, then slowly pour in 1 1/2 cups milk. Stir consistently until milk has thickened. Add in shredded cheddar cheese, cream cheese, salt, pepper, garlic powder and chopped broccoli. Stir well and let cook for 3-5 minutes on low. Remove from heat and set aside.
    • When chicken has reached a temperature of 160 degrees, remove from oven, and spoon some of the broccoli cheese sauce on the top, or serve on the side for dipping.
