Chicken and Waffles

Chicken and Waffles
Chicken and Waffles
Haven't had the urge to make or try the trending Chicken and Waffles craze. It's never been in my Southern meals and didn't notice it until my late 30s. Throughout life pancakes and sausage was always a treat when the syrup got on the sausage so I'm not a hater of Chicken-n-Waffles. Nevertheless syrup on fried chicken still has me a little conflicted. Long story short a customer asked why I don't use more Pepper Bee in my nightly IG dinners. One being, I don't generally eat meals with a lot of sugar. She didn't care and insisted on more Pepper Bee ideas... This is my best Pepper Bee recipe to date and good it was. However, I'm still conflicted with sugar (honey) bombed recipe as dinner.

My Unexpected Love Affair with Chicken and Waffles

For years, my Southern-inspired meals steered clear of the trendy chicken and waffles. Pancakes and sausage were my go-to comfort food, a childhood favorite where the happy accident of syrup mingling with sausage was pure bliss. I never understood the chicken and waffle craze; the idea of sweet syrup on savory fried chicken felt…odd. It just wasn't something I gravitated towards.

Then, a pivotal moment arrived. A regular at my dinner gatherings – a woman with an adventurous palate – challenged my culinary choices. She loved my Instagram dinners but felt they lacked a certain "sweet and savory" pizzazz, specifically mentioning Pepper Bee, a honey-based sauce. While I'm not a huge fan of meals overloaded with sugar, her enthusiasm was contagious. I decided to give her request a shot; I needed to create a chicken and waffles recipe that would satisfy her cravings and hopefully, even convert me.

The journey started with experimenting. I cleaned and prepared the chicken tenders with meticulous care, ensuring I removed every bit of tendon and membrane for the perfect texture. Brining the chicken was crucial for succulence. A simple brine, nothing too fancy, allowed the chicken to absorb flavors and stay incredibly moist during grilling. This process alone improved the chicken significantly compared to any I’d had before. Then came the grilling – I always use charcoal for that smoky depth of flavor. Wrapping each tender in bacon created a delightful salty crunch. The addition of Sowflakes, a seasoning blend, added another layer of complexity. The sweet heat of the Pepper Bee was the final touch, although I still found myself hesitant about the sugar content.

But then came the moment of truth: the first bite. The contrast between the crispy, savory chicken, the fluffy waffles, and the subtly sweet Pepper Bee was astounding. It wasn't just a dish; it was an experience. The textures and flavors complemented each other in a way that I never expected. The slightly sweet and spicy Pepper Bee wasn't overpowering; instead, it harmonized with the richness of the chicken and the airy lightness of the waffles. It was a delightful dance on my palate, sweet and savory in perfect balance, a combination that surprised even me. My conflicted feelings about the sugar melted away with each delicious bite.

This recipe, a testament to my culinary exploration, has become a personal favorite. It’s a dish that embodies the spirit of culinary adventure, where the unexpected fusion of flavors and textures creates something truly special. It's a reminder that sometimes, the most satisfying dishes are the ones that challenge our preconceived notions and expand our culinary horizons. It's a testament to the idea that even a simple dish can be elevated with the right balance of elements, resulting in a harmonious, delicious experience. This isn’t just chicken and waffles; it’s a story of culinary curiosity and the unexpected joy of discovery.

The waffle itself was a simple Kellogg's Eggo waffle, warmed to perfection. I've tried fancy waffle recipes but sometimes simple is better, especially when you have a flavorful chicken to pair it with. This is a recipe for those who enjoy a sweet and savory adventure. Don’t be afraid to experiment with different flavor profiles and your preferred cooking method. Ultimately, what matters is creating a dish you can be proud of and that brings joy to those you share it with. And yes, even my preference for lower sugar meals has begun to shift, though the recipe remains relatively sugar-intense.

So, while I may still have a slight hesitation towards overly sugary recipes, the remarkable success of this Chicken and Waffles recipe opened my eyes and palate to the endless possibilities of culinary exploration. It’s a reminder that culinary adventures are worth embracing, even when they take us slightly outside our comfort zones. Ultimately, good food, good company, and a willingness to try new things are the cornerstones of a delicious journey.
