As a busy working mom, finding quick and healthy weeknight dinners is a constant challenge. I'm always juggling work deadlines, school pick-ups, and after-school activities, leaving little time for elaborate cooking. That's why I rely heavily on recipes that are both delicious and easy to prepare. This baked salmon recipe, passed down from my mother, is a true lifesaver. It’s the perfect example of a dish that’s surprisingly sophisticated yet unbelievably simple to make. The flavors are vibrant, the salmon is perfectly cooked, and cleanup is a breeze. It's a recipe I turn to again and again, whether I’m having a rushed week or want a healthy and satisfying meal for the family.

What I love most about this recipe is its versatility. The basic components – salmon, lemon, and herbs – allow for endless customization. Feel free to experiment with different herbs like parsley, chives, or tarragon, depending on what you have on hand or what flavors you’re craving. You can also add other vegetables to the packet, such as asparagus, broccoli, or bell peppers, to create a complete and balanced meal. The beauty of this recipe lies in its simplicity; the flavors are allowed to shine without being overwhelmed by complicated techniques or excessive ingredients. It's a testament to the fact that sometimes, the simplest dishes are the most satisfying.

The process is remarkably straightforward. Simply preheat your oven, prepare the salmon filets, season them generously with salt and pepper, and then layer on your favorite herbs and lemon slices. Wrapping the salmon in foil creates a self-contained packet that steams the fish, resulting in a moist and tender texture. This method also eliminates the need for added oil, keeping the dish light and healthy. The cooking time is relatively short, typically around 20 minutes, making it perfect for a busy weeknight dinner. Once it's done, the aroma filling your kitchen is absolutely heavenly, promising a delicious and satisfying meal. I often serve this with a simple side of quinoa or a fresh salad to complete the meal. The delicate flavor of the salmon is beautifully complemented by the bright citrus notes of the lemon and the aromatic herbs.

This recipe isn't just about convenience; it's about creating a delicious, healthy, and memorable meal for myself and my family. It's a recipe that speaks volumes about the importance of family and tradition. The simple act of making this dish connects me to my mother, to her wisdom, and to the love she poured into preparing meals for our family. It's a recipe that I'm proud to share, knowing it will bring joy and nourishment to those who try it. So, try this recipe, and experience the delicious simplicity for yourself. You won't be disappointed!

Tips for Success:

  • Use fresh, high-quality salmon filets for the best flavor.
  • Don't overcook the salmon; it should be flaky and moist.
  • Adjust the cooking time depending on the thickness of your filets.
  • Experiment with different herbs and vegetables to customize the recipe to your liking.
  • Serve immediately for the best flavor and texture.

Step-by-step

    • Preheat oven to 200c/390f. Clean and de-bone salmon filets.
    • Prep two sheets of aluminum foil, one for each filet.
    • Drop half a teaspoon of olive oil in the center of the foil. Then place the salmon in the center skin down on top of the oil and just give it a quick move back and forth to spread the oil.
    • Salt & pepper to taste, then place the fresh herbs on top of the salmon.
    • Cut the lemon in half, then cut two thin slices from each half and place on top of the salmon. Squeeze the remaining lemon halves on each of the filets.
    • Wrap the foil tight and place in the oven for about 20 minutes.
    • Unwrap, and serve.
