The Ultimate Comfort Food: Creamy Mashed Potatoes

As a busy working mom, finding time to cook a wholesome and delicious meal can be a real challenge. Weeknights are often a whirlwind of homework, extracurricular activities, and the general chaos of family life. But there are some dishes that even on the busiest of days are worth making from scratch. This creamy mashed potato recipe is one of those dishes. It's surprisingly quick, incredibly versatile, and the taste? Pure comfort food heaven. Forget those instant mixes; this is the real deal.

The secret to truly creamy mashed potatoes lies in a few simple techniques. First, choosing the right potatoes is key. I prefer using starchy potatoes like Russet or Yukon Gold, as they have the perfect balance of fluffiness and creaminess when cooked and mashed. Secondly, the cooking process is crucial. I’ve perfected a method using my trusty Thermomix, but you can easily adapt it to any stovetop. The gentle, low-temperature cooking ensures the potatoes are cooked through and fluffy, without becoming mushy. This is paramount to getting that perfect creamy texture.

Beyond the Basics: Ways to Elevate Your Mashed Potatoes

While this recipe is delicious on its own, the beauty of mashed potatoes is their adaptability. They’re a blank canvas for culinary creativity! Here are some ideas to transform your simple mashed potatoes into something truly special:

  • Garlic and Herb Mash: Add a few cloves of roasted garlic and a sprinkle of fresh herbs like rosemary, thyme, or chives for a fragrant and flavorful twist.
  • Cheesy Mash: Stir in some grated cheddar, Gruyère, or Parmesan cheese for a rich and decadent side dish.
  • Roasted Garlic and Parmesan Mash: The combination of sweet roasted garlic and sharp parmesan is simply divine.
  • Spicy Mash: Add a pinch of cayenne pepper or a dash of hot sauce for a little kick.
  • Sweet Potato Mash: Swap out regular potatoes for sweet potatoes for a naturally sweet and vibrant side.
  • Creamy Cauliflower Mash: Add some riced cauliflower to the potatoes for a lighter and healthier version.

Serving Suggestions:

Mashed potatoes are the perfect accompaniment to a variety of dishes. They are a classic side for roast chicken, beef, or pork. They're equally delightful paired with fish, or even as a base for shepherd's pie or cottage pie. The possibilities are endless!

A Quick Note on Milk:

I always use skim milk in my mashed potatoes. It gives them a wonderfully creamy texture without adding extra fat. However, you can certainly experiment with whole milk, half-and-half, or even cream for a richer, more decadent result. Just remember to adjust the amount of liquid depending on the type of milk you choose.

This recipe is more than just a simple side dish; it’s a celebration of comfort food. It's a dish that brings warmth and satisfaction to any meal, no matter how rushed or hectic the day might have been. And that's a feeling worth savoring.

So, the next time you’re looking for a quick, easy, and incredibly delicious side dish, look no further. These creamy mashed potatoes are sure to become a family favorite. Enjoy!

Step-by-step

    • Place milk, salt and pepper and chopped potatoes into TM bowl
    • Cook for 20 minutes at 100oC on speed 1
    • Ensure potatoes are well cooked before mashing
    • They are well cooked when they start to fall apart
    • Do not mash undercooked potatoes as they will be very gluey
    • Insert butterfly
    • Add the butter
    • Mash for 20-30 seconds on speed 3-4
    • GENERAL TIPS: You can mash without the butterfly. To add butterfly simply move potatoes to side of bowl to insert securely.
    • For smaller quantities, simply reduce the amount of potatoes and the liquid proportionately.
    • If reducing quantity, reduce the cooking time by approx 5 minutes.
