It's low-carb, creamy, comforting, and ready in under 20 minutes!

I stumbled upon this recipe while searching for quick and easy low-carb options. I have been trying to maintain a healthier lifestyle, focusing on nutritious foods that are quick to prepare since i started my new job that requires long hours. This recipe perfectly fits the bill. The rich and creamy texture is completely satisfying, and the broccoli adds a nice nutritional boost without weighing me down. I often find myself craving this soup even on days when I don't feel quite so rushed. It is just as satisfying as many richer cream based soups.

One of my favorite things about this recipe is its versatility. I'm always experimenting with different variations to keep things interesting. Sometimes I add a bit of shredded chicken or leftover roast chicken for extra protein. Other times I'll throw in some diced potatoes if I'm not strictly adhering to a low-carb diet that day. The beauty of it is, it's easily adaptable to your taste and dietary needs. I've even found that substituting heavy cream with full fat coconut milk provides a unique and delicious flavor variation.

The Instant Pot is an absolute game-changer in my kitchen. It simplifies the cooking process tremendously, allowing me to prepare complete meals in a fraction of the time it would take using traditional methods. This recipe is testament to this efficiency. The combination of the broccoli, cheddar, and cream creates a rich and flavorful broth, which is perfect for a light lunch or a hearty dinner on a cold night.
