My Go-To Grilling Recipe: Pulled Pork and Bacon Jalapenos

As a busy mom, finding time to cook a delicious and satisfying meal can feel like a Herculean task. Between school runs, work deadlines, and keeping the house somewhat organized, the idea of spending hours in the kitchen often feels overwhelming. That's why I rely on quick, flavorful recipes that still impress the family. One such recipe that has become a family favorite is my Pulled Pork and Bacon Jalapenos. It’s surprisingly easy to make, yet delivers a fantastic punch of flavor that everyone loves.

The beauty of this dish lies in its simplicity. It starts with readily available ingredients: pulled pork (I often buy pre-cooked to save time), bacon, jalapenos, and a good quality BBQ sauce. The prep work is minimal; it’s mostly about chopping the onions and garlic, cleaning the jalapenos, and assembling the peppers. The real magic happens on the grill. The smoky char of the bacon perfectly complements the spicy kick of the jalapenos, all while the pulled pork stays wonderfully juicy and tender. The BBQ sauce adds a sweet and smoky glaze that ties everything together beautifully. It’s a flavor combination that's hard to resist. Honestly, the aroma alone is enough to make your mouth water!

This recipe is incredibly versatile. You can easily adjust the level of spice by using milder peppers, or for those who enjoy a real kick, you can go for habaneros or even ghost peppers! The BBQ sauce is also customizable. I love using a sweet and smoky sauce, but you can experiment with different flavors to find what suits your taste best. One thing's for sure; this dish always delivers a delicious and satisfying meal. I often serve it alongside some corn on the cob and a simple side salad for a complete and balanced meal. And the leftovers? Let's just say they disappear just as quickly as the first batch.

Beyond the Dinner Table

This isn’t just a weeknight dinner; it’s perfect for gatherings as well. Whether you're hosting a summer barbecue, a casual get-together with friends, or even a potluck, these pulled pork and bacon jalapenos are guaranteed to be a crowd-pleaser. They're easy to transport, and their bold flavors make them a conversation starter. Plus, they’re visually appealing - the combination of the crisp bacon, the vibrant green jalapenos, and the glistening BBQ sauce is truly tempting.

One of the best things about this recipe is its adaptability. You can easily make it ahead of time. Prepare the peppers and store them in the refrigerator until you’re ready to grill them. This is especially helpful for busy schedules, allowing you to have a delicious meal ready without the last-minute rush. The cooking time is also relatively short, meaning you can get dinner on the table quickly, leaving more time for family and other commitments.

Tips and Tricks for Success:

  • Use high-quality ingredients: The better your ingredients, the better the taste. Splurge on good quality bacon and BBQ sauce for the best results.
  • Don't overcrowd the grill: Give the peppers enough space to cook evenly. If necessary, cook them in batches.
  • Adjust the cooking time: Cooking time will vary depending on the size of your peppers and the heat of your grill. Keep an eye on them to avoid burning.
  • Get creative with your toppings: Once they're cooked, you can add extra toppings such as crumbled blue cheese, chopped cilantro, or a drizzle of sour cream for an extra flavor boost.

I hope you enjoy this recipe as much as my family and I do. Happy grilling!

Step-by-step

    • Cut a slit out of each pepper, run under water and clean out seeds and the membranes. Set aside.
    • In a medium sized saute pan, coat the bottom with about 2 tbs of olive oil and heat up.
    • Add the onions and garlic and saute for about 5 minutes until they become softened.
    • Add the pork, salt, pepper and BBQ sauce. Mix together well.
    • Remove from heat and set aside. (You only need it on the stove for a couple of minutes just to heat through).
    • Depending on the size of your jalapeno's (or other pepper of your choice), stuff the pepper with the pulled pork (I used a couple of tablespoons per pepper).
    • Wrap each pepper with a slice of bacon and secure with a toothpick.
    • Heat grill to a medium high heat (350-375 degrees).
    • Place the peppers on the grill and cook until the bacon is cooked through basting the peppers with the additional BBQ sauce when you flip your peppers.
    • Make sure the peppers are well coated with the sauce. I cooked mine for about 45 minutes.
