  • 1/2 onion sliced
  • 1 cup white rice (i use regular rice, washed)
  • 1 tbs extra virgin olive oil
  • 1/2 yellow onion (medium size)
  • 1/2 carrot tiny sliced
  • 1/2 cup zuchini tiny sliced
  • 1/4 cup fresh mushrooms ticker sliced (if is small cut in 3)
  • 1 corn sliced and steamed
  • 1 cup broccoli florets steamed (3 minutes)
  • 2 tbs consume de pollo
  • 1/4 cup green pepper tiny sliced

Step-by-step

    • In a non-stick pan, put the olive oil with onion (to sweat, for few minutes only).
    • Add 1 cup of rice and 1 cup of water. If you want more, add more rice (is 3 of us, so this is perfect amount for us). How much rice you add, same amount of water.
    • 1 TBS Consume de Pollo
    • Stir well everything, lower the flame on MINIMUM, cover the pan and set your timer at 20 minutes.
    • Steam the broccoli for 3 minutes (or boil in water, but not more than 3 minutes, because you want them green)
    • Steam the corn for 6 minutes (or boil)
    • In a non-stick pan add 2 TBS butter, with onion and carrots. Fry few minutes on high flame. If carrot is still hard, add 1/4 cup water and cover for 5 more minutes.
    • Add Zucchini, green pepper for 3 more minutes
    • Add mushrooms, for 2 minutes. Stir everything. And last minute add the corn and Broccoli. Add 1 TBS consume de pollo and black pepper. Stir very well, but gentle.
    • Once the vegetables are done, add the cooked rice on top of them and stir well and gentle.
    • Serve with fresh pineapple. Add a lot of flavour.
