Air Fryer Reuben Egg Rolls: A St. Patrick's Day Twist

St. Patrick's Day is a time for celebration, and what better way to celebrate than with a delicious and unique twist on a classic? This year, I decided to ditch the traditional corned beef and cabbage and try something new: Air Fryer Reuben Egg Rolls! The idea came to me while browsing through my favorite recipe blogs – I'm always looking for quick, easy, and flavorful meals, especially during busy weeks.

I've always loved Reuben sandwiches. The salty, savory corned beef, the tangy sauerkraut, the creamy Swiss cheese, and the thousand island dressing... it's a flavor combination that's hard to beat. But sometimes, I crave something a little more convenient, a little less messy. That's where these egg rolls come in. They capture all the deliciousness of a Reuben, but in a fun, portable package, perfect for a festive gathering or a casual weeknight meal. The air fryer makes them wonderfully crispy on the outside, while the inside remains warm and gooey with melted cheese.

The Process: Simplicity Itself

The best part? These Reuben egg rolls are incredibly easy to make. No complicated techniques or hours of prep work are required. I simply sliced up some corned beef and Swiss cheese (thinly sliced is ideal for easy rolling), drained the sauerkraut (a paper towel helps soak up the excess moisture), and then it was assembly time. I layered the corned beef and cheese in alternating strips inside the egg roll wrapper. The key here is not to overfill; you want just enough filling to create a satisfying bite without making the egg roll too bulky. A little sauerkraut on top, a quick fold, and you're nearly there.

A light spray of oil ensures crispy perfection in the air fryer. About 14 minutes later (7 minutes per side, but keep an eye on them – every air fryer is a little different!), I had a batch of golden-brown, crispy Reuben egg rolls ready to serve. I served mine with a generous helping of thousand island dressing (store-bought or homemade, your choice!), and the whole family devoured them.

Adaptability and Variations

This recipe is incredibly versatile. Feel free to experiment with the filling. Add some caramelized onions for extra sweetness, or some chopped pickles for a bit of extra crunch. If you're not a fan of sauerkraut, you could try shredded cabbage or even kimchi for a spicy kick. The possibilities are truly endless.

One important tip: Don't be afraid to adjust the cooking time in the air fryer depending on your preference and your air fryer's capabilities. Some like their egg rolls a little crispier, while others prefer them a bit softer. The beauty of air frying is the ability to customize the cooking process to achieve your desired level of crispness.

More than just a St. Patrick's Day treat

While these Reuben egg rolls are particularly fitting for St. Patrick's Day, they're a versatile snack or appetizer that can be enjoyed any time of the year. They're perfect for game day, potlucks, or even just a quick and satisfying lunch or dinner. So ditch the usual fare and give these Reuben egg rolls a try – they’re a guaranteed crowd-pleaser that will add a delightful twist to any occasion.

Beyond the Recipe: My St. Patrick's Day Tradition

For me, St. Patrick's Day is more than just a holiday; it's a chance to reconnect with family and friends. It's a time for laughter, good conversation, and, of course, delicious food. This year, these Reuben egg rolls became a central part of our St. Patrick's Day celebration. We gathered around the table, sharing stories and laughter while enjoying the crispy, flavorful egg rolls. It was a simple, yet memorable, way to celebrate.

I hope you enjoy this recipe as much as I did. Let me know in the comments how your Reuben egg rolls turned out. Happy St. Patrick's Day!

Step-by-step

    • Slice Corned Beef into narrow slices.
    • Slice Swiss Cheese into narrow slices.
    • Drain Sauerkraut and dry off. (I used a paper towel to absorb the juice!)
    • Take 1 egg roll wrapper and moisten edges with water so it will seal together when you fold it over. Point the corner towards you.
    • Stack the Corned Beef and Swiss Cheese in alternate layers. I started with the Swiss Cheese because who doesnt love cheese, and layered it cheese, corned beef, cheese, corned beef, and finished with the cheese. I had my Corned Beef sliced a little thicker but you can slice it any way you like.
    • Top it off with a little or a lot of sauerkraut.
    • Take the pointed end closest to you and fold over the contents.
    • Bring up the sides and fold in.
    • Continue folding over until it looks like an egg roll.
    • Spray lightly on both sides with vegetable oil spray.
    • Place in Air Fryer Basket. I always leave a little room around them so they bake nicely.
    • Air Fry at 400° for 7 minutes, flip and another 7 minutes on the other side. You can adjust the baking time to whether you like them light or dark. (My husband loves everything burnt! lol)
    • Remove with tongs from Air Fryer and serve with Russian dressing aka 1000 island dressing.
    • You can make your own 1000 island dressing with ketchup, mayonnaise and relish.
    • Enjoy!
