Ingredients:

  • 8 pcs turkey wings cleaned and de-feathered
  • 3 cups cajun stuffing medley of various cajun ingredients
  • 6 pcs jalapeno peppers cleaned of veins and seeds and rough chopped
  • 6 pcs cayenne peppers cleaned of veins and seeds and rough chopped
  • 1 whole head garlic cleaned and rough chopped
  • 3-4 pcs green onions cleaned and rough chopped
  • 3/4 cup parsley cleaned and rough chopped
  • 2 tablespoons cajun hot sauce (your favorite brand)
  • 2 tablespoons hot chili sauce (sriracha brand hot chili sauce)
  • 2 tablespoons cajun seasoning (your favorite brand or your own special mix)
  • 1/2-3/4 cup olive oil (extra virgin)

Step-by-step

    • Clean, de-feather, and rinse the turkey wings. Put them in a pan lined with paper towels to dry while prepping the stuffing.
    • Clean and rinse all vegetables. Chop off the tops of the peppers, de-vein, and seed them. Break apart the garlic head, clean the skins from all cloves, and cut off the root ends. Cut off the ends of the green onions. Roughly chop or tear apart the parsley.
    • Roughly chop all veggies and place them in a food processor. Very finely chop/puree all veggies in the processor.
    • Add hot sauces and Cajun seasoning and blend into the mixture.
    • Preheat your oven to 350 degrees (Fahrenheit).
    • Using a large injection pump (meat pump), fill it with the pepper stuffing blend, attach the needle, and insert it into the end nearest the little nubbly. Inject the Cajun pepper stuffing blend, making sure to squeeze some in as you pull out.
    • Place stuffed turkey wings into a large aluminum roasting pan, drizzle olive oil over the wings and rub in to coat. Make sure that oil covers the bottom of the pan too.
    • Sprinkle Cajun seasoning mix on each side of the wings. Don't be shy with the seasoning.
    • Spoon remaining pepper stuffing puree into any openings between wings.
    • Tightly cover with foil and place into your preheated 350-degree oven and bake for 1 1/2 hours, covered.
    • After the cooking time, remove wings from the oven, turn oven heat up to 400 degrees. Uncover, baste wings, and return to oven. Cook for an additional 30 minutes.
    • Remove from the oven and allow to rest 5 minutes. Enjoy!
