My Favorite Weeknight Dinner: Beef and Bean Burritos

As a busy working mom, finding time to cook delicious and satisfying meals can feel like a constant uphill battle. Between school pick-ups, after-school activities, and the never-ending cycle of laundry and household chores, the last thing I want to do when I get home is spend hours in the kitchen. That's why I rely heavily on recipes that are both quick and easy, yet still pack a flavorful punch. One of my absolute go-to meals is Beef and Bean Burritos. These aren't your fancy, gourmet burritos; they're hearty, comforting, and perfect for a busy weeknight dinner. The best part? They’re incredibly versatile and can be customized to fit everyone’s preferences.

The beauty of this recipe lies in its simplicity. It's a great way to use up leftover ground beef, or you can easily make a large batch on the weekend and enjoy the leftovers throughout the week. I often double the recipe and freeze half for those nights when even the thought of cooking is too much. Plus, my kids absolutely devour these burritos. They’re so much easier to eat than tacos – no messy spills, less clean up, and maximum deliciousness! The combination of seasoned ground beef, warm refried beans, and melty cheese in a soft tortilla is pure comfort food. It's a crowd-pleaser that’s sure to be a hit with your family too.

Beyond the basics: While the recipe is straightforward, I love to experiment with different additions to keep things interesting. Sometimes I add a dash of diced bell peppers or jalapenos to the beef mixture for a little extra flavor and a touch of heat. Other times, I’ll swap out the cheddar cheese for Monterey Jack or pepper jack, depending on what we have on hand. Sour cream or guacamole are also great additions for a creamier, richer burrito experience. The possibilities are endless! Ultimately, the best part about this recipe is its adaptability – feel free to change things up according to your family's tastes and what you have in your pantry.

Beyond the dinner table: These burritos are more than just a simple weeknight dinner; they're also perfect for lunch boxes or potlucks. They travel well and hold up beautifully, making them an ideal choice for taking on the go. I frequently pack a couple in my kids' lunch boxes and they're always a hit. The kids love them cold, but they're equally delicious reheated in the microwave or oven. The warm, comforting flavors are a great energy boost during a busy school day, and who doesn't love the convenience of a quick and satisfying lunch? For potlucks, they're easy to transport, and they're always one of the first dishes to disappear!

A little about me: As a working mother, my life is a whirlwind of activity, and finding time for anything other than the essentials feels nearly impossible. But even amidst the chaos, I believe in the power of a good home-cooked meal to bring people together and create lasting memories. This recipe is a testament to that belief – a simple, satisfying meal that requires minimal effort but offers maximum flavor and enjoyment for my entire family. It's a recipe born out of necessity, but it's quickly become a family favorite, and a reminder that even on the busiest of days, a delicious meal is within reach.

Tips and tricks:

  • Prep ahead: The beef mixture can be made ahead of time and stored in the refrigerator for up to 3 days, saving you valuable time on busy weeknights.
  • Don’t overfill the burritos: Overfilling can make them difficult to roll and may lead to spills.
  • Use a good quality tortilla: The flavor of the tortilla can significantly impact the overall taste of the burrito. Look for tortillas that are soft and pliable.
  • Get the kids involved: This is a great recipe to get the kids involved in the cooking process. They can help with assembling the burritos, which is a fun and engaging activity.
  • Experiment with toppings: Don't be afraid to experiment with different toppings and fillings to customize your burritos to your liking. Salsa, sour cream, guacamole, lettuce, and tomatoes are all great options.

This recipe isn't just a quick and easy meal; it's a testament to the power of simple cooking and the joy of sharing a delicious meal with loved ones. So next time you’re short on time but craving a hearty and flavorful dinner, give these Beef and Bean Burritos a try. You won’t be disappointed!

Step-by-step

    • Preheat the oven to 170 to 180 degrees F.
    • In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through.
    • Add the cumin, chili powder, oregano and salt and stir to combine.
    • Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
    • Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till it's melted. Remove from the heat.
    • Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat.
    • Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
    • When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
    • Sprinkle the tops with the cilantro leaves and serve immediately.
