This is a recipe that my mom used to make and she called it Nachos. I know everyone calls it Taco Salad but it can be made into so many different things. I use this recipe for tacos, nachos, taco salad, and burritos. It pretty much depends on what tortilla version you use.

Ingredients You'll Need:

  • 2 1/2 pounds ground beef
  • 1 cup salsa
  • 2 large jalapeno peppers, seeded and diced
  • 3 large tomatoes, diced
  • 1 bunch green onions, diced
  • 1 can refried beans
  • 2 tablespoons taco seasoning
  • 2 tablespoons dried cilantro
  • 2 cloves garlic, minced
  • 1 medium lime
  • 1 package Mexican blend cheese, shredded
  • 16 ounces sour cream
  • 1 cup ranch dressing (optional)
  • 1 bag tortilla chips
  • Salt and pepper to taste

Step-by-step

    • Clean, chop, and dice all the vegetables for the recipe.
    • In a 5 qt. saucepan over medium-high heat, add the ground beef. Cook until done; drain well.
    • Place the beef back onto the heat and add the salsa, peppers, refried beans, garlic, taco seasoning, lime juice, cilantro, salt, and pepper to taste. Lower heat to low. Cover and simmer for about 10 - 15 minutes, stirring occasionally.
    • To serve nachos, place a layer of tortilla chips on a plate. Add a helping of the meat mixture. Layer the various vegetables that you like on top of the meat and add the shredded cheese and sour cream or Ranch dressing, if desired.
    • This can also be served with a wedge of avocado and black olives.
