My Go-To Comfort Food: Cheesy Chicken Spaghetti

As a busy working mom, finding time to cook delicious and satisfying meals can feel like a Herculean task. Between juggling work deadlines, school pick-ups, and keeping the house running smoothly, sometimes the easiest option seems to be takeout. But, I’ve found that a little bit of planning and some simple, adaptable recipes can go a long way in making sure my family enjoys wholesome, home-cooked meals without the added stress. This Cheesy Chicken Spaghetti recipe is a perfect example. It's easy to prepare, feeds a crowd, and tastes even better the next day, making it ideal for busy weeknights or weekend gatherings.

I first encountered this amazing dish at a work potluck. A colleague brought it in, and let me tell you, it was a sensation! Everyone raved about it. It quickly became a firm favorite, and I've been making it regularly ever since. The beauty of this recipe is its versatility. It’s a blank canvas that allows for personal touches and adaptations based on individual preferences. You can experiment with different types of tomatoes, adjust the amount of chicken or broth, and even add some extra vegetables to make it even healthier. The creamy, cheesy sauce perfectly complements the tender chicken and perfectly cooked spaghetti, creating a symphony of flavors in your mouth.

One of the key elements that sets this dish apart is the use of Velveeta cheese. The smooth, creamy texture it lends to the sauce is simply divine. It melts beautifully, resulting in a rich and indulgent sauce that coats each strand of spaghetti. And while this recipe calls for a rotel and diced tomatoes, using one or the other or substituting another favorite tomato-based product, won’t change the integrity of the dish. Honestly, I've had variations made with only diced tomatoes or only Rotel and they both turned out just as delicious. This adaptability means that you can make this recipe your own, tweaking it to match your family's taste preferences and what you have available in your pantry.

The best part? This recipe is incredibly easy to make. The chicken cooks effortlessly in a crock pot, freeing you up to attend to other tasks. Once the chicken is cooked and shredded, it's just a matter of combining the ingredients and letting it simmer to perfection. I usually make a double batch on the weekend and freeze half to have another meal ready during a hectic week. You simply have to thaw it the night before and reheat it. It's the perfect meal prep recipe for busy individuals or families. This dish is a guaranteed hit, whether you're serving it to a group of friends, family members, or colleagues. It's a comfort food classic with a twist, a recipe that will keep you coming back for more. Try it tonight, and experience the simple pleasure of a home-cooked meal that everyone will love.

Ingredients:

  • Salt and pepper to taste
  • One bag of frozen chicken breasts
  • 1 and 1/2 cups chicken broth
  • 1 can rotel tomatoes
  • 1 can petite diced tomatoes
  • 2 lbs velveeta block cheese
  • 1 and 1/2 lbs uncooked spaghetti

Step-by-step

    • In a crock pot, cook chicken breasts until cooked thoroughly.
    • Break up chicken with a large fork (will shred pretty easily).
    • Add salt, pepper, chicken broth, tomatoes and Velveeta.
    • Cook on high until cheese is melted (20-30 minutes).
    • In a large pot, cook spaghetti noodles until they are just done (Careful to not overcook them! Slightly under-cooked will be much better than slightly over-cooked).
    • Pour cheese mixture into a large pan (I use a roasting pan, but you could also use 2 casserole pans or 2 8x10 pans).
    • Add as much spaghetti to the cheese mixture as you want. (I find that 3/4 of a 2 pound box works well)
    • Cover and bake at 350 until cheese is bubbly! (25-30 minutes)
