The beauty of this recipe lies in its simplicity. It's a perfect blend of sweet and wholesome, incorporating the satisfying crunch of raisin bran, the delicate sweetness of ripe bananas, and the subtle tartness of applesauce. What sets these muffins apart is their surprising healthiness. Using high-fiber raisin bran as the base ensures that you're getting a good dose of fiber in every bite. In fact, a single muffin will likely contribute significantly towards your daily fiber intake. This makes them not only a delicious treat but also a guilt-free indulgence for health-conscious individuals like myself. I always look for ways to incorporate healthy ingredients into my baking without compromising on flavor, and this recipe truly achieves that balance perfectly.

The process of making these muffins is surprisingly easy and enjoyable. It's a wonderful activity to do on a lazy weekend morning, filling your home with the warm, inviting aroma of baking bread. The slightly unconventional method of letting the cereal mixture sit for an hour before mixing adds a unique element to the recipe, and results in a wonderfully moist and tender muffin. I love how the different textures and flavors combine to create a complex yet harmonious taste profile. These muffins aren't just a breakfast treat; they’re perfect for an afternoon snack or even a dessert alongside a cup of tea.

Step-by-step

    • Pour the cereal into the 4C measuring cup and top with the milk.
    • Add the egg, smooshed banana and applesauce.
    • Let this sloppy looking mess sit for an hour. Don't mix it, yet!
    • Combine the flour, baking powder, salt, both Splendas and cinnamon in the mixing bowl with the mixing spoon.
    • Go clean the bathroom. Before you get your cleaning supplies, preheat your oven to 350°F.
    • By the time you get done (45 - 50 minutes), the cereal mix will be super soupy. Mix it with a fork until it looks disgusting.
    • Pour the brown gushy mixture into the dry ingredients.
    • Gently fold the ingredients until well combined and nothing looks dry or unattended.
    • Spray the inside of the tin holes and the edges ... these puppies rise! Use the soup ladle to evenly distribute the mass into each tin.
    • Sprinkle the tops with the sugar crystals.
    • Bake for 25 - 27 minutes. DO NOT OVER BAKE ... they get rubbery and dry.
    • Serve warm or nuked with a smattering of butter on each half ... if you love butter, it just makes the muffin even more luxurious ... this is the only fat in this batch of deliciousness. There is a TON of fiber and good fruit carbs in these babies.
    • Enjoy!
