Tam's Vodka Sauce

Tam's Vodka Sauce
I love vodka sauce, but I became discouraged after ordering it out. I created this recipe because taking leftovers home in doggy bags made for an oily separated mess the next day. The butter in this sauce is at a minimum, so it can be made ahead and heated up to serve. It even freezes and defrosts well.

Tam's Amazing Vodka Sauce: A Culinary Journey

As a busy professional, finding time to cook delicious and satisfying meals can feel like a Herculean task. Between meetings, deadlines, and the never-ending to-do list, the thought of spending hours in the kitchen often feels overwhelming. But I believe that nourishing ourselves with delicious food shouldn't be a luxury reserved for weekends only. This is where my passion for quick, easy, and flavorful recipes truly shines.

My love affair with vodka sauce began years ago during a spontaneous trip to Italy. The rich, creamy texture, the subtle tang of tomato, and the vibrant aroma transported me to another world. I've since tried countless variations, from restaurant renditions to homemade attempts. But nothing quite captured the magic of that first taste until I perfected my own recipe: Tam’s Vodka Sauce.

This recipe isn't just another vodka sauce; it's the culmination of my culinary experiments and a solution to a common problem: leftover oily, separated messes from restaurant takeout. The secret? Minimizing butter. This allows the sauce to be made ahead of time, reheated effortlessly, frozen for later, and even thawed beautifully without losing its delicious qualities. The flavors meld together during the simmering process, creating a depth that’s hard to replicate. It's a recipe that's as versatile as it is delicious, easily adaptable to suit your own taste preferences and dietary needs. I often find myself making a double batch - one for the week and one for the freezer!

The Inspiration Behind Tam's Vodka Sauce

My culinary journey wasn't always smooth sailing. There were many trials, errors, and quite a few burnt dinners. But through it all, my passion for creating delicious and satisfying meals kept me going. The creation of Tam's Vodka Sauce wasn't a sudden epiphany; it was the result of years of experimenting and refining. I wanted a recipe that was easy to make, consistently delicious, and convenient for my busy lifestyle. The inspiration came from a frustrating experience with takeout vodka sauce – the oily separation and disappointing texture after reheating fueled my determination to create something better. This recipe reflects my commitment to delivering a high-quality dish without sacrificing time or convenience. The versatility of this sauce is also key. I can effortlessly adjust the creaminess and spice levels to please various palates. And the best part? The leftovers are just as amazing as the initial serving, a stark contrast to my initial takeout woes.

More Than Just a Recipe: A Culinary Companion

Cooking for me is more than just preparing a meal; it's a form of self-expression. It's a creative outlet, a stress reliever, and a way to nourish both my body and soul. Embrace the Journey, One Delicious Dish at a Time

Cooking should be an enjoyable experience, not a chore. This recipe is designed to be simple, adaptable, and fun. Don’t be afraid to experiment with different ingredients or adjust the seasonings to your liking. The beauty of cooking lies in the freedom to create something unique and personal. So go ahead, embrace the journey, and savor every delicious moment.

Step-by-step

    • Cut the Prosciutto into tiny pieces. You will need a good, sharp knife for this as it can be tough to cut through.
    • Melt butter in a skillet on high and when sizzling, add prosciutto and garlic and sauté until prosciutto browns a bit. Add crushed red pepper flakes and stir. You can always add more later.
    • Quickly add Vodka to HOT skillet. It should reduce very quickly. Watch out for steam. Don't lean over pan when you do this as it can cause a bit of a head rush! Reduce heat to medium.
    • Add tomatoes and puree. I use Stop & Shop brand puree because it’s thick. Any other brand and you may need to add paste to thicken. Stir. Add sugar. Reduce heat to low. Cover and let simmer for about 10 min. Taste sauce. If it still seems too acidic, add a little more sugar. Continue simmering for another 5 min, tasting for acidity.
    • Just before turning off sauce, add heavy cream. Mix well. Adjust amount of cream to your preferred level of ‘pink’.
    • Serve over Penne.
