Apple Cinnamon Coffee Cake

Apple Cinnamon Coffee Cake
Do you miss apple coffee cake from your high-carb days? I did too, until I made this recipe based on an old beloved recipe of mine from yesteryear. I think this low-carb version is even nicer! It has a much better texture in my opinion. It's the same thing with my favorite banana loaf recipe. It also tastes way better than the high-carb version, and I'm not kidding or being big-headed about it. It is just the case. Some desserts simply taste better with the Gluten-Free Bake Mix, I find. Even high-carbers enjoy our low-carb desserts and when that happens it is indeed a win!

My Apple Cinnamon Coffee Cake Journey: A Low-Carb Delight

For years, the aroma of warm apple cinnamon coffee cake filled my kitchen, a comforting ritual that marked special occasions and lazy weekend mornings. Each bite was a delicious surrender, a moment of pure indulgence. But then came the shift in my lifestyle; a conscious decision to embrace a low-carb approach. The thought of giving up my beloved coffee cake felt like losing a dear friend. Could I find a way to recreate those cherished flavors without the high-carb guilt?

The answer, as it often is with culinary adventures, lay in experimentation. I started by rummaging through old recipe books, searching for inspiration. I unearthed a cherished family recipe – a classic apple coffee cake that had been a staple for generations. Its rich, comforting aroma had always been a welcome invitation to warmth and happiness. This time around, however, I knew I'd have to adapt it to my new dietary needs. The challenge was on!

Initially, the transformation seemed daunting. Replacing refined sugar and traditional flour with low-carb alternatives felt like navigating a complex culinary maze. Each ingredient swap was a delicate balancing act, a dance between preserving the original flavor profile and achieving the desired texture. But I pressed on, fueled by nostalgia and the sheer determination to recreate a comforting classic in a healthier way.

Many experiments later, a revelation! The use of Gluten-Free Bake Mix 2 proved to be a game-changer. Not only did it simplify the process, but it also delivered a surprising textural enhancement. The resulting cake was not just a low-carb adaptation; it was something extraordinary. The texture was unbelievably light and fluffy, the flavors intensely concentrated, surpassing even my fond memories of the high-carb original.

Whether served warm from the oven or chilled for a refreshing dessert, this cake is guaranteed to be a crowd-pleaser. And that, my friends, is the ultimate reward!

Ingredients Note: The choice of sweetener is a matter of personal preference. I've found that sucralose or stevia work best in this recipe. The Gluten-Free Bake Mix 2 provides the ideal structure, but feel free to experiment with your own gluten-free baking mix if you have a favorite.

Serving Suggestions: While the cake is delightful on its own, I encourage you to experiment with different serving styles. A dollop of low-carb whipped cream or a sprinkle of powdered erythritol adds a touch of extra sweetness. You can also serve this with a side of unsweetened applesauce or a scoop of low-carb vanilla ice cream.

Step-by-step

    • Preheat oven to 350°F (180°C).
    • Place apples in a casserole dish with a little water and microwave 1 to 2 minutes to soften.
    • Grease a 9 x 13-inch (23 x 33 cm) glass baking dish.
    • In a large bowl, combine Gluten-Free Bake Mix 2, baking powder, baking soda, cinnamon, and salt; stir together well.
    • In a food processor or mixer bowl, process butter. Add eggs, liquid sweetener, whipping cream, erythritol, and gelatin. Process a couple of minutes.
    • Add dry ingredients; process.
    • Spread batter evenly in the prepared baking dish.
    • Push apple slices into batter (batter does not need to cover apples).
    • Sprinkle with Pecan Crumb Topping.
    • Bake 25 to 30 minutes, or until a knife inserted in the center comes out clean, and the surface is golden brown.
    • Serve with Creme Fraiche or sweetened whipped cream.
    • Pecan Crumb Topping: In a small bowl, combine pecans, Gluten-Free Bake Mix 2, erythritol, and cinnamon. Stir in melted butter and liquid sweetener, if using.
