The simple pleasure of perfectly fluffy potatoes, enriched with butter and cream, is a small luxury that I cherish. It's the kind of food that makes me feel grounded, connected to something familiar and comforting in the midst of life’s busy moments.

I've always been a bit of a creature of habit when it comes to cooking. I find solace in the familiar, in the predictability of a recipe I know will always work. There's a certain security in having a go-to dish that never disappoints, a culinary constant in a world of constant change. And this mashed potato recipe is just that – my reliable, comforting friend in the kitchen. It's adaptable too. Sometimes, I'll add roasted garlic for an extra layer of flavour, or a splash of milk to lighten things up. But the core recipe remains the same, a testament to its simplicity and perfection. It’s the perfect foil for a hearty roast chicken, a succulent steak, or even just a simple salad. The creamy texture, the subtle hint of butter, and the delicate flavour of fresh chives all combine to create a dish that's both satisfying and sophisticated.

Beyond the simple pleasure of taste, there's also the tactile experience of making mashed potatoes. The rhythmic mashing, the feeling of the potatoes yielding under the pressure of the ricer, the gentle folding in of the butter and cream – it's a meditative process, a small act of culinary mindfulness. It’s in these small, everyday rituals that I find a sense of peace and calm. And sharing this dish with loved ones, watching their faces light up as they take their first bite, is the ultimate reward. Step-by-step

    • Peel and cube potatoes. They should be in 1 inch cubes for even cooking.
    • Place in a pot and cover with water.
    • Bring to a boil and then reduce heat to medium, to maintain a rolling boil.
    • Boil until the potatoes are fork tender.
    • On low heat, melt butter in a sauce pan with the heavy cream (do not boil).
    • Drain the potatoes and push thru a potato ricer (or smash very well)
    • Add in the butter and heavy cream.
    • Gently fold in the chives, season with salt and pepper.
    • Garnish with more chives and melted butter
