Vegan French Toast: A Delightful Breakfast Treat

Vegan French Toast: A Simple and Delicious Breakfast

As a busy working mom, finding time for a healthy and satisfying breakfast can be a real challenge. Between juggling work deadlines, school runs, and keeping the household running smoothly, the last thing I want to do is spend ages in the kitchen. That's why I've become a huge fan of quick and easy recipes that don't compromise on flavor or nutrition. This Vegan French Toast recipe is a perfect example. It's surprisingly simple to make, incredibly delicious, and completely adaptable to my ever-changing schedule.

The best part about this recipe? It’s completely customizable! I often use whatever bread I have on hand – whether it's leftover sourdough, whole wheat, or even a slightly stale loaf. The beauty of this recipe lies in its versatility. Sometimes, I’ll add a sprinkle of cinnamon to the batter for a warm, comforting spice. Other times, I'll experiment with different extracts like almond or orange, depending on my mood and what's in the pantry. Sometimes, I'll add fresh berries or bananas after cooking for extra sweetness and texture. It's a blank canvas for culinary creativity!

One of my favorite things about this recipe is how easily it can be prepped ahead of time. I often make the batter the night before and store it in the refrigerator. This means that in the morning, all I have to do is heat up the pan and cook the slices. This saves me precious minutes during those hectic weekday mornings. Even if I'm traveling, I can easily pack the batter with the bread in a zip lock bag which will allow me to enjoy a wonderful breakfast anywhere.

The texture of this vegan French toast is perfectly fluffy and subtly sweet. The flax eggs create a surprisingly similar consistency to traditional eggs, binding the batter beautifully. The dairy-free milk adds a creamy richness, and the maple syrup provides just the right touch of sweetness. The subtle hint of vanilla extract rounds off the flavour profile nicely. It's a satisfying breakfast that keeps me feeling full and energized throughout the morning.

Beyond the convenience and delicious taste, this vegan French toast is also a healthy and nutritious choice. It's a good source of carbohydrates for sustained energy, and the flaxseed adds a boost of fiber and omega-3 fatty acids. It’s a great way to start the day with a feel-good breakfast that nourishes my body and satisfies my taste buds. I’ve even started making a larger batch on weekends, then freezing portions for quick weekday breakfasts. It's that good!

This recipe is a lifesaver for busy mornings, perfect for a weekend brunch, or a delightful treat any time of day. Its versatility and ease of preparation make it a staple in my kitchen. Try it out – you won't be disappointed! And feel free to share your own variations and additions in the comments below. I'm always looking for new and exciting ways to tweak this delicious recipe!

Step-by-step

    • Combine the flaxseed meal and water in a small bowl, and set aside for at least ten minutes.
    • Slice the bread if you need to do so.
    • Combine all of the ingredients in a medium mixing bowl, with the flax egg and flour last, in that order.
    • Whisk to really well combine the mixture, and let rest, covered in the fridge for at least 8-10 minutes.
    • In the mean time, prepare the cooking pan. You should brush the pan with some kind of oil. I recommend coconut oil.
    • After 10 minutes, transfer the french toast mixture to your kitchen counter, and heat your pan over medium heat.
    • Dip one slice of bread at a time in the mixture. The thicker the bread, the longer you should dip it in.
    • Test how long you should dip the slice in the mixture, and adjust when you make the second one.
    • Keep brushing the pan with oil if it starts to stick.
    • Lower the heat once the pan gets too hot. Towards the end of the batch, you should have it on low.
    • Cook each slice of toast until it is brown on both sides.
    • Enjoy immediately!
