My Unexpected Culinary Adventure: Butter Chicken Pizza

As a busy working mom, my life often feels like a whirlwind of meetings, school runs, and never-ending to-do lists. Finding time to cook a proper meal, let alone experiment with new recipes, can feel like a luxury. But last week, a strange craving hit me – a craving for something that combined two of my absolute favorite foods: butter chicken and pizza. I know, it sounds crazy, a fusion of Indian and Italian cuisine, but trust me, it worked. I was hesitant at first, envisioning a culinary catastrophe, but I’m always up for a challenge, and the result was surprisingly delicious.

The process wasn't without its bumps. The dough was a bit stickier than I anticipated, and I had a minor panic moment when the pizza started to brown a little too quickly in the oven. But I persevered, adjusting my technique along the way, and the final product was well worth the effort. The rich, creamy butter chicken sauce, perfectly balanced with the savory chicken and the gooey mozzarella cheese, made for a flavor explosion. And the crisp, thin pizza base provided the perfect vehicle for this unusual but delightful combination.

This experience reminded me that even amidst the chaos of daily life, there's always room for a little culinary adventure. It’s about embracing unexpected flavor combinations and not being afraid to experiment, even if it means stepping outside of your comfort zone. The joy of creating something delicious, something new and exciting, is a wonderful reward in itself. It's a testament to the power of food to bring joy and satisfaction, even on the busiest of days. It’s also a reminder that sometimes, the best things in life are the things you never expected.

The beauty of this recipe is its adaptability. You can adjust the spice level to your liking, and the toppings are practically endless. Imagine adding some finely chopped cilantro or a sprinkle of fresh chili flakes for an extra kick. The possibilities are limitless. You can certainly explore different cheese options too! While I stuck to the classic mozzarella, I'm considering trying some feta or even a spicy pepper jack cheese next time.

Ultimately, this Butter Chicken Pizza was more than just a delicious meal; it was an adventure, a reminder that even the smallest acts of creativity can bring a spark of joy into our hectic lives. So go ahead, embrace your inner chef, and try this recipe. Who knows what culinary wonders you might discover?

Ingredients I used:

  • salt to taste
  • 1/2 tsp active dry yeast
  • 1 small red onion thinly sliced
  • 1/4 cup lukewarm water
  • 1 cup grated mozzarella
  • 1/4 tsp white sugar
  • 2 cups all-purpose flour (plain flour)
  • 1/4 cup natural yogurt
  • 1/2 - 3/4 cup lukewarm milk
  • few mint or coriander (cilantro) leaves

Step-by-step

    • Preheat oven to 220C. If you are using pizza stone, place it in the oven.
    • Combine together yeast, sugar and water in a small bowl. Set aside for 5 minutes or until foamy.
    • Place flour, yogurt, and yeast mixture in a large bowl. Season with salt. Add milk little by little to make sticky dough.
    • Cover, and set aside in a warm place for 30 minutes or 2 hours or until the dough doubles in size.
    • Turn the dough onto a lightly floured surface. Sprinkle more flour on top. Knead for 3-4 minutes, or until smooth and elastic.
    • Use your hands to shape the pizza into a large circle. Use a fork to prick all over the base.
    • While making butter chicken, make sure the sauce is really thick. After making butter chicken, take out all the chicken pieces from the sauce, and shred them into bite-sized pieces. Set aside.
    • Spread the butter chicken sauce all over the base.
    • Top with shredded chicken and then mozzarella.
    • Transfer pizza onto the stone.
    • Bake for 20-25 minutes.
    • Remove from oven. Top with red onions and mint leaves.
    • Serve with mint chutney if you like.
