My Go-To Chocolate Chip Lava Cookies: A Recipe for Any Occasion

As a busy working mom, time is my most precious commodity. Finding recipes that are both delicious and quick to make is a constant quest. These Chocolate Chip Lava Cookies fit the bill perfectly. They’re decadent, rich, and surprisingly simple to whip up, even on a hectic weeknight. The molten chocolate center is the star of the show, a delightful surprise with every bite. The recipe is easily adaptable – I’ve been known to swap out the milk chocolate chips for dark chocolate or even add a sprinkle of sea salt on top for an extra layer of flavor. They're perfect for a cozy night in, a bake sale, or even a special occasion, and they always impress.

The beauty of this recipe lies in its simplicity. There's no need for complicated techniques or hard-to-find ingredients. Everything is readily available at your local grocery store. I love that I can have a batch of these warm, gooey cookies ready in under an hour. The kids adore them, and even my husband, who usually prefers something more savory, sneaks a couple (or three!). It's a recipe that brings joy to my family, and that's priceless. The aroma alone as they bake fills my kitchen with warmth and the promise of sweet indulgence. What could be better than that?

Beyond the Recipe: These cookies aren't just about the baking process; they’re about the moments created. The shared laughter as we scoop the dough, the anticipation while they bake, the happy sighs as we savor the first bite. It's these little things that make life sweeter, richer, and more meaningful. This recipe is more than just ingredients and instructions; it's a recipe for creating lasting memories. So, grab your apron, gather your little ones (or your friends!), and let's bake some happiness.

Tips and Variations:

  • For extra gooey centers: Don't overbake the cookies! Start checking for doneness at 15 minutes, and remove them from the oven when the edges are set but the centers are still slightly soft.
  • Get creative with chocolate: Experiment with different types of chocolate chips – dark chocolate, white chocolate, or even a combination! You could also add chopped nuts or dried fruit to the dough for extra texture and flavor.
  • Make them ahead: The cookie dough can be made ahead of time and stored in the refrigerator for up to 2 days. This is perfect for busy weeknights.
  • Make it a family affair: This recipe is perfect for involving kids in the baking process. Let them help with measuring ingredients, mixing, and scooping the dough.
  • Presentation matters: These cookies look beautiful served warm, straight from the oven. Dust them with powdered sugar or a sprinkle of sea salt for an extra touch of elegance.

Baking these cookies isn’t just about the final product; it's about the journey. It's about creating something delicious, sharing it with loved ones, and savoring the simple pleasures of life. So, the next time you need a little dose of happiness, grab your ingredients and bake a batch of these irresistible Chocolate Chip Lava Cookies. You won't regret it.

I hope you enjoy this recipe as much as I do! Let me know in the comments how your cookies turned out. Happy baking!

Step-by-step

    • Preheat oven to 350 degrees F.
    • Spray a standard size muffin tin with cooking spray.
    • Place ½ cup chocolate chips in a Ziploc bag, and seal shut.
    • Lay the Ziploc bag flat in the microwave, spreading out the chocolate chips in a single layer.
    • Microwave for 30 seconds.
    • Remove bag and flip, microwaving for an additional 10-15 seconds until all the chips are softened.
    • Set aside to cool.
    • With an electric mixer, cream the butter and sugars until light and fluffy, about 3-5 minutes.
    • Add egg and vanilla and beat until well combined.
    • Meanwhile, in a separate bowl, whisk together the flour, salt, and baking soda.
    • Add to the wet ingredients and beat on low speed until just combined.
    • Add the remaining chocolate chips (1 cup) and stir to combine.
    • Using half the cookie dough, scoop 1.5-2 tbsp of dough, flatten it out a bit, and place in the bottom of the muffin tin.
    • Repeat for a total of 10 cookies.
    • Cut a small tip in the corner of the Ziploc bag, and gently squeeze a layer of chocolate over the cookie.
    • Scoop and flatten the remaining dough and place on top of the chocolate layer.
    • Bake at 350 for 15-20 minutes, until the edges are just browned.
    • As soon as they come out of the oven, run a knife around the edges to make for easy removing later.
    • Cool completely before removing from the muffin tin, running a knife around the edge to help loosen.
