Cornbread Peach Cobbler with Bourbon Glaze - A Sweet Treat for Any Occasion

A Taste of Summer: My Cornbread Peach Cobbler with Bourbon Glaze

As a busy working mom, I don’t always have a lot of time to spend in the kitchen. But when I do, I love creating recipes that are both delicious and easy to make. This Cornbread Peach Cobbler with Bourbon Glaze is one of those recipes. It’s the perfect blend of sweet and savory, with a delightful surprise element – a crispy Pop-Tart crumble topping! The rich, bourbon-infused glaze adds a touch of sophistication, making this a dessert worthy of any occasion, from a casual weeknight dinner to a special gathering with friends.

The inspiration for this recipe actually came from a surprisingly hectic trip I took last summer. I was visiting family, juggling work calls, and trying to squeeze in some much-needed relaxation. One evening, while everyone was relaxing, I found myself craving something comforting and homemade. Knowing that time was short, I scoured my pantry for inspiration. That's when I stumbled upon a can of peaches, some leftover Pop-Tarts, and a bottle of bourbon. Improvisation, my friends, is the key to many a delightful culinary adventure!

The beauty of this cobbler lies in its simplicity. The cornbread base is moist and subtly sweet, perfectly complementing the juicy peaches. The Pop-Tart crumble adds an unexpected textural element – a delightful crunch that contrasts beautifully with the tender cornbread. And the bourbon glaze? Oh, my goodness, the bourbon glaze! It's the perfect finishing touch, adding a sophisticated warmth and depth of flavor that elevates this dessert from ordinary to extraordinary. The subtle hints of bourbon enhance the sweetness of the peaches and cornbread, creating a symphony of flavors that will tantalize your taste buds.

This recipe is incredibly versatile. Feel free to experiment with different types of Pop-Tarts – I’ve tried it with chocolate fudge, and even strawberry, and each time it was a unique and delicious experience! You can also adjust the amount of bourbon in the glaze to suit your taste preferences. For a milder flavor, reduce the amount of bourbon and increase the brown sugar. If you prefer a stronger bourbon flavor, increase the amount of bourbon accordingly. It’s all about personal preference, and the best part is, there’s no right or wrong way to make this cobbler – just your way.

Beyond the Recipe: This cobbler isn't just about the delicious taste; it's about the memories made while creating it. The aroma that wafts through the kitchen as it bakes is enough to transport you to a place of cozy comfort and contentment. Whether you’re enjoying it with family and friends, or savoring a quiet moment by yourself, this cornbread peach cobbler will undoubtedly become a cherished addition to your recipe repertoire.

It’s a recipe that truly reflects the spirit of improvisation and resourcefulness – a testament to the fact that sometimes, the best recipes are born from unexpected moments and available ingredients. So go ahead, gather your ingredients, and let the sweet aroma of summer fill your kitchen. This Cornbread Peach Cobbler with Bourbon Glaze is more than just a dessert; it's a culinary adventure waiting to happen. Enjoy!

A note to my fellow busy moms (and everyone else!): This recipe is designed for busy lives. The ingredients are commonly available, the steps are straightforward, and the result is utterly rewarding. Don’t let a busy schedule stop you from enjoying delicious, homemade desserts. Sometimes, a little bit of sweetness is exactly what we need to recharge and reconnect with ourselves and loved ones.

Step-by-step

    • In a small bowl mix together the flour, sugar, baking powder and salt.
    • In a larger bowl beat together the eggs, milk, honey, butter/margarine, and corn.
    • Add the mixture from the smaller bowl into the large bowl stirring until mixed evenly and thickened. Drain the liquid from the peaches and the corn, add both to the batter mixing well.
    • Pour the batter into a greased deep dish pie pan or 12 inch dutch oven. Bake at 400 degrees for 25-30 minutes (if using the dutch oven place 10 coals on bottom and 19 on top and bake for 50min-1 hour)
    • While the cobbler is cooking crumble the poptarts in a bowl and pan toast them on medium heat in a medium skillet for about 5 min or until lightly browned.
    • When the cobbler has about 10 minutes remaining (or just before it starts to solidify) top evenly with the poptart crumble and finish cooking.
    • Pour the bourbon into a pot over medium low heat. Allow the bourbon to reduce for about 5 min.
    • Add the brown sugar to the bourbon and stir constantly until dissolved.
    • Stir in the cornstarch to thicken and hold on low heat until ready to serve cobbler.
