Let's be honest, moms (and let's face it, everyone else too!) are busy. Juggling work, kids, appointments, and everything in between leaves precious little time for elaborate meal preparations. This 20-minute cheesy veggie pasta bake is my latest obsession, and I'm thrilled to share it with you. It’s become a staple in our house – a lifesaver on those chaotic weeknights when even thinking about cooking feels like a monumental task. The best part? My kids actually *love* it!

The beauty of this recipe lies in its simplicity. No complicated techniques, no obscure ingredients, just a handful of pantry staples transformed into a comforting and satisfying meal. I always have pasta, jarred sauce, and some cheese on hand, and the veggies are easily adaptable to whatever's fresh at the grocery store or already lurking in my fridge. Sometimes I add bell peppers, sometimes spinach, it really depends on what needs using up! This adaptability is a huge win in my busy life. There’s a certain satisfaction in throwing together a delicious meal from simple ingredients, knowing you've created something healthy and tasty without spending hours in the kitchen. The entire family can enjoy this dish, from picky eaters to adults craving a quick and fulfilling supper. It's a testament to the fact that healthy and delicious don't have to be mutually exclusive, especially when you're short on time.

Why this recipe works:

  • Speed: Ready in just 20 minutes – perfect for busy weeknights.
  • Simplicity: Minimal prep and easy to follow instructions.
  • Flexibility: Easily adaptable to the vegetables you have on hand.

Beyond the practicality, this dish is a lovely way to nourish your family. It's packed with hidden veggies, providing essential vitamins and minerals, and the cheese adds a healthy dose of calcium. This isn't just a quick meal; it's a responsible and delicious way to ensure your family gets the nutrients they need. It's a meal that embodies my philosophy: healthy eating doesn't have to be complicated or time-consuming. It just needs to be delicious, satisfying, and, most importantly, doable.

I often find myself reflecting on how important simple meals are, especially as a mother. Life gets hectic, and sometimes the most satisfying moments are found not in elaborate culinary creations, but in the shared joy of a simple, easy meal enjoyed together as a family. This cheesy veggie pasta bake provides just that – a moment of connection and deliciousness in the midst of the everyday chaos. It’s a small victory, but a significant one, in the ongoing quest to balance work, family, and everything in between. And isn't that what life is all about?

Step-by-step

    • Bring a large pot of water to a boil. Add pasta and cook according to package directions. When there is 2 minutes left before the pasta is done, add zucchini and mushrooms into pot. Cook remaining 2 minutes. Strain.
    • Preheat broiler on high.
    • Add Barilla Pasta sauce to pot, then add the strained pasta/veggies into the sauce. Mix well. Add 1/3 cup of mozzarella cheese into pot. Mix well.
    • Grease a large casserole dish with cooking spray, and then dump pasta mixture into baking dish. Top with remaining 2/3 cup mozzarella and 1/4 cup parmesan cheeses. Sprinkle a dash of dried spices (oregano, thyme, and basil), over top the cheese.
    • Place in broiler and cook for 3-5 minutes. Watch closely as it can burn quickly and cook time depends on oven. When it is bubbly and browning, take it out. Serve and enjoy!
