Step-by-step

    • Clean the green peas and put them into hot water for 5 minutes.
    • Grate or slice the carrot and sauté it in butter.
    • Mince the onion and sauté both the carrot and onion in butter until the onion is translucent.
    • Add finely sliced pancetta and sauté for no more than 5 minutes.
    • Add flour and fry for about 2 minutes, then add cold water and make a creamy liquid (like sauce velouté).
    • Cut the green parts of the spring onion, mince the parsley and celery leaves, and add them to the pot.
    • Add the green peas and about 1 liter of beef stock.
    • Add salt and pepper.
    • Cook until the green peas are soft.
    • When soft, remove the green peas and blend them into a purée (leave 1/6 of the peas untouched). You can blend it with a stick blender.
    • Add thyme and cook for 15 minutes.
    • At the end, add sour cream and minced chives.
    • Serve with croutons.
