My Comforting Meatball and Rice Soup

My Go-To Meatball and Rice Soup Recipe

As a busy working mom, finding time to cook a healthy and delicious meal can feel like a Herculean task. But there's nothing quite like the warmth and comfort of a hearty soup to end a long day. This Meatball and Rice Soup is my absolute go-to recipe, a perfect blend of simplicity and satisfaction. It’s incredibly versatile – adjust the seasonings to your preference, add different herbs, or even swap the ground pork for another protein. The beauty lies in its ease of preparation and the wonderful, comforting aroma that fills your kitchen while it simmers. It's a true one-pot wonder, minimal cleanup required, which is always a bonus!

I love this recipe because it doesn't require any fancy ingredients or complicated techniques. The simple combination of rice, potatoes, meatballs, and a rich tomato-based sauce creates a flavorful and satisfying meal the whole family will enjoy. I often double the recipe and freeze half for those busy nights when even the thought of cooking is overwhelming. It reheats beautifully, maintaining its delicious flavour and hearty texture.

The Magic of Meatballs: I’ve experimented with various meatball recipes over the years, but this one has become my tried and true. The key is using high-quality ground pork for that rich, savory flavor. I add fresh herbs for a burst of freshness – parsley, dill, or oregano work wonderfully. Don't be afraid to experiment with your favorite spices to tailor the meatballs to your liking. A subtle hint of Vegeta adds a unique depth of flavour, but feel free to omit it if you prefer. The simple seasoning of salt and pepper are more than enough.

Building the Broth: The base of this soup is a classic combination – potatoes and rice cooked in a simple broth. I prefer using long-grain rice as it holds its shape well, but any rice will do. The potatoes add heartiness and creaminess to the broth. I use generous amounts of water to ensure the soup is nice and soupy, but feel free to adjust the amount depending on your preference. During cooking, you might notice some white starch rising to the top. Skimming this off keeps the soup clear and avoids a slightly cloudy texture.

The Sauce that Makes it Sing: The simple yet flavorful tomato sauce adds richness and depth. A combination of fresh tomato, ketchup, and sour cream creates a lovely tangy balance. I prefer sautéing the onions and carrots before adding them to the tomato sauce; this allows for the sweetness of the vegetables to develop beautifully. A simple sauté brings out their natural sweetness, which complements the overall flavor profile.

Serving Suggestions: This hearty soup is perfect for a cozy night in. I often serve it with crusty bread for dipping – it's the perfect way to soak up every last drop of delicious broth. A side salad could also be a nice compliment to a meal like this. It’s also a great meal prep option – make a large batch on the weekend, and you’ll have delicious, comforting lunches or dinners ready for the week ahead. This versatility makes it a fantastic staple in any busy household, and a true testament to the simple joys of home-cooked food. It's also wonderful to share with friends and family – it's guaranteed to warm hearts and bellies.

Adapting the Recipe: This soup is so versatile, allowing for plenty of customization. You can easily adjust the seasonings to match your taste. Feeling adventurous? Add different herbs or vegetables to create your signature version. You could substitute the ground pork with ground beef or chicken, or add other proteins to make it even heartier.

This recipe is a testament to the power of simple, wholesome ingredients and the magic of creating something delicious and satisfying without the need for extravagant efforts. This meatball and rice soup is more than just a meal; it's a comforting hug in a bowl, a perfect remedy for a long day, and a delicious reminder of the simple joys of home cooking. Enjoy!

Step-by-step

    • Add 14 cups water to a large pot on high heat.
    • Cube potatoes.
    • Rinse rice under cold water until the water runs clear.
    • When water comes to a boil; add the potatoes and rice.
    • Cook 15 minutes over high heat.
    • Remove anything that floats to the top (white starch from potatoes).
    • Mix all of the ingredients for the meatballs; shape into about 24-28 meatballs.
    • Add to pot.
    • Cook about 10-12 minutes. (Until rice and potatoes are be just about ready).
    • Remove skin from tomato. I just make two slashes on top, put the tomato in a cup and pour hot water over it. Give it about a minute and the skin will peel off.
    • Shred tomato, set aside.
    • Chop onion and shred carrots; add to a large skillet with 3 Tbsp oil.
    • Sauté on med/high heat until soft (about 8 minutes).
    • Add tomato, ketchup and sour cream to skillet.
    • Let it cook on med heat for another minute.
    • Add to pot.
    • Add the rest of the seasoning (add additional seasoning to taste if necessary).
    • Add your favorite chopped herbs (fresh or frozen).
    • Cook another few minutes (just until potatoes and rice and completely cooked.)
