Brunch Buddies Enchiladas: A Crowd-Pleasing Casserole

My Go-To Brunch Casserole: Brunch Buddies Enchiladas

As a busy working mom, weekends are precious. They're a time for family, relaxation, and of course, delicious brunch! For years, I've been part of a wonderful women's group, and we've established a delightful tradition: taking turns hosting brunch. Initially, I relied on the usual suspects – casseroles, mostly. But let's be honest, the same old casseroles can get a bit…blah. I craved something different, something vibrant and flavorful, a brunch dish that would leave my friends raving. That's when the idea struck me: Mexican-style enchiladas, but with a brunch twist.

The result? Brunch Buddies Enchiladas! This recipe has become a resounding success, not just among my women's group but also amongst my family and friends. Its unique blend of savory and slightly sweet flavors is irresistible, and the process of assembling and baking it is surprisingly straightforward, even for someone who's juggling work and family responsibilities. I love the fact that it can be made ahead of time, even frozen for a future brunch gathering. This allows me to enjoy the company of my friends and family without being glued to the kitchen all morning. The ease and deliciousness of the recipe make it ideal for any occasion, from a casual weekend gathering to a more formal brunch party.

What makes these enchiladas so special? The secret lies in the harmonious blend of ingredients. The richness of the creamy egg and half-and-half mixture perfectly complements the savory flavors of the ham and cheese. The bell peppers and onions provide a satisfying crunch, while the vibrant tomatoes add a touch of freshness. I particularly love the addition of toppings – a little something extra to customize the experience for each guest. The best part? The leftovers are just as good (if not better!) the next day, so you'll have delicious lunch ready, too.

Tips and variations for your Brunch Buddies Enchiladas:

  • Spice it up: Add a pinch of chili powder or a dash of your favorite hot sauce to the egg mixture for an extra kick.
  • Vegetarian option: Substitute the ham with black beans or roasted vegetables for a vegetarian-friendly version.
  • Cheese lover’s delight: Experiment with different cheese blends. Monterey Jack, cheddar, or a blend of Mexican cheeses all work wonderfully.
  • Make it your own: Add other favorite brunch ingredients, such as bacon, sausage, or spinach. The possibilities are endless!
  • Prep ahead: Assemble the enchiladas the night before and bake them the next morning for a stress-free brunch experience.
  • Freezing for later: Freezing unbaked enchiladas is a fantastic time-saver. Just remember to thaw them overnight in the refrigerator before baking.

Brunch Buddies Enchiladas are more than just a recipe; they're a testament to the joy of sharing food and fellowship. They represent the warmth and camaraderie of my women's group, the laughter and conversation shared over a delicious meal. It's a dish that brings people together, one delicious bite at a time. And that, my friends, is what makes it truly special.

    • Preheat oven to 350 degrees.
    • Place 2 cups cheese, ham, green pepper, onion and tomato in a large bowl; toss to combine.
    • Place 1/2 cup mixture off center on each tortilla.
    • Roll up and place in a greased 13x9-in. baking dish, seam side down.
    • In another bowl, whisk eggs, cream, flour and seasonings until blended; pour over enchiladas.
    • Sprinkle with remaining cheese; add toppings.
    • Bake, covered, 30 minutes.
    • Uncover; bake 10-15 minutes longer or until cheese is melted and a knife inserted in egg portion comes out clean.
