Pizza Logs: A Quick and Easy Weeknight Meal

As a busy working mom, finding time to cook a healthy and delicious dinner can feel like an impossible task. Between juggling work deadlines, school pick-ups, and extracurricular activities, the last thing I want to do is spend hours in the kitchen. That's why I'm always on the lookout for quick, easy, and kid-approved recipes that don't compromise on taste or nutrition. Enter these amazing Pizza Logs!

I stumbled upon this recipe while browsing through a food blog (I can't remember which one, unfortunately!), and I immediately knew I had to try it. The idea of transforming simple egg roll wrappers into mini pizzas was so clever and appealing. And let me tell you, the result was even better than I expected. These Pizza Logs are crispy, cheesy, and bursting with flavor. My kids absolutely devoured them, and even my picky husband had seconds! The best part? They're ready in under 20 minutes, making them the perfect weeknight dinner solution.

What makes this recipe truly special is its versatility. You can easily customize the toppings to fit your family's preferences. Want to add some veggies? Go for it! Love mushrooms? Toss them in! The possibilities are endless. I personally love using turkey pepperoni for a healthier twist, and the light mozzarella string cheese adds the perfect amount of creamy goodness. But feel free to experiment and create your own signature Pizza Log masterpiece.

Beyond the Recipe: Time-Saving Tips for Busy Moms

Beyond just the recipe itself, this dish speaks to a larger point for me: efficient cooking. As a working mother, I’m always looking for ways to save time in the kitchen. This recipe, with its short preparation time and minimal cleanup, is a perfect example of that. Here are a few more tips I’ve picked up along the way to help busy moms like me make dinner time less stressful:

  • Prep ingredients in advance: Chop veggies, measure spices, and portion out ingredients on the weekend to save time during the week. This little bit of forward planning makes weeknight cooking a breeze.
  • Embrace one-pan or one-pot meals: These minimize cleanup and often cook quickly. Sheet pan dinners are a personal favorite.
  • Cook extra and freeze leftovers: Double your recipe and freeze half for another night. This ensures you always have a quick and healthy meal on hand.
  • Get the kids involved: Even young children can help with simple tasks like washing vegetables or setting the table. It’s a great way to teach them about cooking and make dinner time a family affair.
  • Don't be afraid to use shortcuts: Pre-cut vegetables, pre-cooked meats, and store-bought sauces can be your best friends when you're short on time.

Pizza Logs: More Than Just Dinner

These pizza logs aren’t just a convenient weeknight meal; they’re also incredibly versatile. They're perfect for parties, game days, or even a fun after-school snack for the kids. Imagine a platter of these mini pizzas, surrounded by fresh vegetables and a light dip. They’re both visually appealing and satisfying. The crispy, golden-brown exterior and the warm, melty cheese filling are a guaranteed crowd-pleaser, no matter the occasion. And the small size makes them perfect for portion control – no more guilt over indulging!

So, if you're looking for a quick, easy, and delicious recipe that the whole family will love, give these Pizza Logs a try. They're a true lifesaver for busy moms (and everyone else!) who want a tasty meal without the fuss. You might even discover, like I did, that creating this simple recipe can be a small act of self-care amidst the chaos of everyday life. The joy of creating something tasty and satisfying for your loved ones, even in a time crunch, is a reward in itself.

Step-by-step

    • Preheat the oven to 425.
    • Lightly mist a large baking sheet with cooking spray and set aside.
    • Pour some water into a small dish and set aside.
    • On a flat surface, place an egg roll wrapper, corner facing toward you (like a diamond) and spread a teaspoon of pizza sauce horizontally across the center of the wrapper, leaving ½ inch or so of space on each side.
    • Sprinkle a pinch of Italian seasoning across the sauce and add a row of 3 pepperoni slices over the sauce.
    • Place half a cheese stick on top of the pepperoni.
    • Fold the bottom corner closest to you up over the ingredients and give it a 90 degree roll.
    • Fold the side corners in and tuck them as you give the filled section another 90 degree roll.
    • Dip your finger in the dish or reserved water and lightly wet the edges of the remaining top corner of the wrapper.
    • Finish rolling the filled pizza log over the wet corner so that it adheres.
    • Place wrapped pizza log onto the prepared baking sheet.
    • Repeat with remaining ingredients.
    • When all of the pizza logs are wrapped and on the baking sheets, mist the tops with cooking spray.
    • Bake for 10-14 minutes, flipping once halfway through, until the wrappers are golden brown.
