My Easy Beef Stroganoff Recipe

My Delicious and Easy Beef Stroganoff

As a busy working mom, finding time to cook a healthy and satisfying meal can often feel like a Herculean task. Weeknights are a whirlwind of homework, extracurricular activities, and the never-ending cycle of laundry. That’s why I've become a master of quick, easy, and delicious recipes that don’t compromise on flavor. This Beef Stroganoff recipe is a perfect example – it’s ready in under 30 minutes and tastes amazing. It's become a family favorite, and I'm thrilled to share it with you. The best part? It's easily adaptable to your dietary needs and preferences. Whether you're watching your carbs, aiming for a low-fat option, or just looking for something comforting and flavorful, this recipe delivers.

The key to this recipe’s success is simplicity. I use readily available ingredients, eliminating the need for extensive grocery shopping or complicated techniques. The rich, savory flavor comes from the perfectly browned beef and the creamy mushroom sauce. I’ve experimented with different types of milk, and I’ve found that almond milk provides the perfect balance of creaminess without overwhelming the other flavors. The addition of glucomannan adds a subtle thickening effect, ensuring a luscious sauce that clings beautifully to the beef. And don’t even get me started on the fresh garlic! I use a generous amount – it adds a wonderful pungent aroma and depth of flavor that truly elevates the dish. But feel free to adjust the amount to your own taste. If you prefer a milder flavor, start with less and add more as needed.

This recipe is incredibly versatile. For a heartier meal, you could serve it over egg noodles, mashed potatoes, or even cauliflower rice for a lower-carb option. I personally love serving it with a side of steamed green beans or a simple salad. It’s also a fantastic make-ahead dish; you can easily prepare it ahead of time and reheat it before serving. This makes it ideal for busy weeknights when time is of the essence. Plus, the leftovers are just as delicious the next day! This Beef Stroganoff is a true testament to how even the busiest among us can create a delicious, wholesome meal without spending hours in the kitchen. It's a recipe that I wholeheartedly recommend to any busy individual looking for a satisfying and flavorful meal option.

Tips and Variations:

  • For a richer flavor: Use bone-in beef for a deeper, more robust taste.
  • Spice it up: Add a pinch of red pepper flakes for a touch of heat.
  • Add vegetables: Incorporate sliced mushrooms, bell peppers, or zucchini for added nutrients and flavor.
  • Make it vegetarian: Substitute the ground beef with lentils or mushrooms for a meatless version.
  • Customize your seasonings: Experiment with different herbs and spices to find your perfect blend.

Ingredients you'll need:

  • 1 lb. ground beef
  • 1 small onion, chopped
  • 2-5 cloves minced garlic
  • 1 tbsp butter
  • 1 cream of mushroom soup cube
  • 1 cup unsweetened almond milk
  • 1/2-1 teaspoon glucomannan powder
  • 1 cup unsweetened 0% Greek yogurt (or sour cream)
  • Salt and pepper to taste
  • Steak seasoning and parsley to taste (optional)

I hope you enjoy this recipe as much as I do! Let me know in the comments how it turns out for you.

Step-by-step

    • Add ground beef, and brown. Cook the beef until a toasty brown develops on the bottom of some of the meat, and it has a rich, roasted smell.
    • Transfer meat to colander, and rinse with very hot water to remove fat. This step can be skipped if you are using a very lean grassfed beef or venison...if in doubt, just rinse.
    • Chop up the onions and garlic.
    • Melt butter in a skillet over medium heat.
    • Cook onions in butter for a minute, and then add garlic and stir.
    • Make a hole in the center of the skillet, and melt down a cream of mushroom soup cube.
    • Pour your cup of almond milk over this, and gently sprinkle the glucomannan into a thin layer over the liquid, whisking as you sprinkle.
    • Stir until it comes together into a gravy.
    • Stir in Sour Cream and seasonings to taste.
    • Blend in well and cook until warmed through.
