Caramel Popcorn
Do you remember when microwaves were first invented? Well, I was just a kid and this is a recipe we made often and I have made it numerous times for my kids. Easy to make and no long wait for the popcorn to bake in the oven. You can have the batch eaten in the amount of time it takes to bake it the old fashioned way in the oven.

The Sweet Smell of Nostalgia: Caramel Popcorn and Microwave Memories

The aroma of warm, buttery caramel popcorn wafting through the house... it's a scent that instantly transports me back to my childhood. Remember those early days of microwave ovens? They were the shiny new gadget, promising speed and convenience, a futuristic marvel in the kitchen. For me, as a kid, they meant one thing: caramel popcorn. This wasn't the kind you laboriously baked in the oven, waiting what felt like an eternity. This was quick, easy, and oh-so-delicious. My mom would whip up a batch in minutes, the sweet, sugary concoction bubbling away in the microwave, the anticipation building with every pop and sizzle. It was a regular treat, a simple pleasure that marked countless movie nights, sleepovers, and rainy afternoons.

Now, as a busy businesswoman juggling meetings, deadlines, and a constantly ringing phone, I find myself drawn back to that same simple pleasure. It's a nostalgic comfort food, a reminder of simpler times. Even better, it’s just as quick and easy to make now as it was then. In the midst of a chaotic day, taking just a few minutes to create something warm, comforting, and utterly delicious feels like a mini-vacation. Plus, the sweet, buttery scent permeating the house is an instant mood booster, a little bit of magic that can transform a hectic Wednesday evening into something a bit more special. It's amazing how such a simple treat can evoke such powerful memories and create new ones too.

I've made this countless times for my own children, watching their faces light up with the same joy I experienced as a child. It's a tradition passed down, a shared experience that binds us together. Sometimes, I even catch my kids sneaking a handful of the cooled popcorn from the airtight container, a secret indulgence they share with each other, just like I did with my siblings. It's those little moments, the shared smiles over a bowl of warm caramel popcorn, that make life sweet. And it’s the simplicity of this recipe, the ease with which it brings joy, that makes it a timeless classic in our family. It's more than just a snack; it's a connection to the past and a promise of sweet moments to come.

Step-by-step

    • Prepare popcorn by putting it into a grocery sized paper bag, set aside.
    • In a large glass mixing bowl (2 quart) put syrup, butter, brown sugar and salt. Cook in microwave 2 minutes or until it boils. Remove from microwave and mix ingredients together well. Add and mix in baking soda. Cook another 2 minutes.
    • Poor mixture over popcorn in bag, tossing popcorn to coat all kernels. Roll up end of bag to enclose popcorn and put it into the microwave. Cook for 1 1/2 minutes. Take out bag and shake, turn bag over and place in microwave again. Cook 1 minute.
    • Shake out caramel popcorn onto two cookie sheets to cool. Once completely cooled it can be stored in an airtight container.
