My Unexpectedly Delicious Bacon-Wrapped BBQ Meatball Adventure

As a busy working mom, finding time to cook anything beyond basic weeknight dinners is a challenge. But last weekend, I had a craving for something savory and a little bit indulgent. I stumbled upon this recipe for bacon-wrapped BBQ meatballs, and despite my initial skepticism (I’m not exactly a culinary whiz), I decided to give it a try. The description promised deliciousness, and honestly, I was looking for a little something to make the family dinner a bit more exciting.

The prep work was surprisingly easy. I gathered the ingredients – ground beef, pork sausage, eggs, breadcrumbs, and all the other bits and bobs – and mixed everything together. The recipe called for a little cheese in the center of each meatball, which was a fun touch and added a burst of flavor. Rolling the meatballs was therapeutic, and my kids even joined in, creating a little assembly line in the kitchen. Wrapping each one in bacon was a bit fiddly, but definitely worth the effort – the smell alone was enough to make my mouth water.

The baking process was simple enough, even for me. I followed the instructions carefully, making sure to drain the excess bacon grease (which, let’s be honest, was the most challenging part because it smelled incredibly tempting). The basting with BBQ sauce was the perfect finishing touch – I used a sweet and smoky sauce that added a layer of rich flavor to the already decadent meatballs.

The results were absolutely phenomenal. The meatballs were juicy and flavorful, with a crispy bacon exterior and a tender interior. The BBQ sauce complemented the savory meat perfectly. My kids devoured them, which is always a win in my book, and even my picky husband went back for seconds. It was a delightful and unexpected success, proving that even a simple recipe can yield incredibly rewarding results.

This experience reminded me that taking a chance on a new recipe, even when time is tight, can be a wonderfully rewarding experience. The process of cooking itself can be a stress reliever, and the joy of sharing a delicious meal with your family is priceless. The bacon-wrapped BBQ meatballs are now officially a regular on our family's dinner rotation. Simple, delicious and totally worth the effort.

I highly recommend trying this recipe yourself. It’s a great option for a casual get-together or a family dinner. The preparation is simple, and the results are undeniably delicious. I am already looking forward to my next batch! Perhaps I'll even try experimenting with different types of BBQ sauce or cheese to see how I can make this recipe even more exciting.

If you're looking for a crowd-pleasing appetizer or a tasty addition to your next barbecue, look no further. These bacon-wrapped BBQ meatballs are guaranteed to be a hit. Just remember to let the bacon grease drain, or else you will be cleaning a sticky mess afterward. Happy cooking!

Step-by-step

    • Place ground beef, pork sausage, eggs, bread crumbs, garlic, and onion powder into a bowl and thoroughly mix the ingredients together.
    • Roll into approximately 28 golf sized balls.
    • Make a hole into the center of the ball and insert a pinch of cheese and pinch the ball shut. Shape back into a ball. (Cheese is optional)
    • Cut the bacon in half and wrap each meatball with a half slice of bacon.
    • Place meatballs about an inch apart on a foil covered pan with the bacon seam side down.
    • Bake at 350F degrees for 20 minutes in center rack. You can also place the meatballs on a cookie rack in the pan. This will keep the meatballs out of the bacon grease.
    • At 20 minutes, take pan out and drain out bacon fat. Brush on BBQ sauce and place back into the oven for 10 minutes and brush on more BBQ sauce.
    • Drain out pan again if needed. Brush on more BBQ sauce and place back into the oven for 5 minutes. If you're not big on BBQ sauce, you can skip the third brushing of BBQ and serve BBQ sauce on the side
    • Drain any remaining bacon fat and serve.
