A Simple Broccoli Slaw Recipe: A Busy Mom's Quick Lunch Solution

Life as a working mom is a whirlwind. Between school pick-ups, soccer practice, and endless to-do lists, finding time to prepare healthy and delicious meals often feels impossible. But what if I told you there's a recipe so simple, so quick, and yet so satisfying, it could become your new go-to lunch or side dish? Enter: this incredible broccoli slaw.

This recipe was gifted to me by a dear friend, and it's become a staple in my busy household. Forget complicated cooking techniques and time-consuming ingredient lists – this slaw is all about ease and freshness. The best part? It's even better when enjoyed immediately, eliminating the need for meal prepping or leftovers!

The beauty of this recipe lies in its versatility. You can easily adapt it based on your preferences and dietary needs. Feel free to adjust the amount of dressing, add more or less of your favorite nuts and seeds, or even swap out the ramen seasoning packets for your preferred flavor profile. One day I might even add some shredded carrots or bell peppers for extra color and crunch. The possibilities are endless!

The crunchy texture of the broccoli slaw, perfectly complemented by the salty crunch of the almonds and sunflower seeds, creates an explosion of flavors in your mouth. The simple yet vibrant dressing, made with just a few readily available ingredients, adds a tangy twist that leaves you wanting more. What sets this recipe apart is its unexpected use of ramen noodles. Not only do they add a delightful textural contrast, but they also contribute a subtle savory element that elevates the entire dish.

I typically use olive oil for the dressing, as it brings a subtle fruity flavor to the slaw that complements the overall profile beautifully. But feel free to experiment. Avocado oil, grapeseed oil or sesame oil can all be wonderful substitutes, adding their own unique flavor nuances to the dish. If you're looking for a lighter option, you could even try a dressing that utilizes a combination of lemon juice and apple cider vinegar instead of the white vinegar.

But let's be real, what makes this broccoli slaw truly exceptional is its speed and ease of preparation. It's perfect for those busy weeknights when you need a quick and nutritious meal that the entire family can enjoy. It’s also ideal for packed lunches or as a refreshing side dish for any occasion. This slaw is my go-to whenever I need a fast, healthy, and unbelievably tasty meal without sacrificing precious family time or my sanity. It's simple enough for even the most novice cooks and flexible enough to accommodate any dietary needs or personal preferences.

This recipe, truly, is a culinary gift that keeps on giving. So, the next time you're short on time but craving something flavorful and fresh, reach for this quick and easy broccoli slaw. You won't regret it!

Step-by-step

    • Mix slaw, chopped onions, noodles only from Ramen noodles (crush them with your hands), almonds and sunflower seeds together in bowl.
    • Make dressing with oil, vinegar, sugar, and add the 2 packets of flavoring from the Ramen noodles.
    • Add dressing to your taste - I used about half.
    • Note: Instead of white vinegar and sugar, I used 1/2 cup of flavored rice vinegar.
