Step-by-step

    • Place skin-on potatoes in a pot of cold water and bring to a boil, cooking until very tender
    • Melt the cream cheese and heavy cream over low heat

    • Mix until smooth
    • Fold in the remaining potatoes and slowly mix until all ingredients are incorporated, but still chunky
    • Adjust seasoning to taste and serve
    • Garnish with cheddar cheese and green onions
