Step-by-step

    set oven to 325F
  • in saucepan bring apple juice to boil while stirring
  • add sauce ingredients except butter then stir and cube butter and add to sauce
  • continue to stir and boil over medium heat until reduced by 1/3
  • apply salt, pepper and cinnamon to all sides of the loin
  • bring a skillet to medium-high heat, sear meat on all sides
  • layer apples on bottom of deep pan and set pork on them
  • arrange remaining apples on all sides and pour sauce over both
  • insert thermometer into thickest part of pork and cover with foil
  • insert into oven and bake for around 1.25 hours
  • pull out pan when thermometer reads 138F and let coast up to temp for 20 minutes
  • slice and serve topped with baked apple slices.
