Healthy Quinoa and Chocolate Chip Granola Bars: A Busy Mom's Go-To Recipe

Healthy Quinoa and Chocolate Chip Granola Bars: A Busy Mom's Go-To Recipe

As a working mom, time is my most precious commodity. Between juggling work deadlines, school pick-ups, soccer practice, and dinner prep, finding healthy and convenient snacks for my family often feels like a Herculean task. That's why I developed this recipe for healthy quinoa and chocolate chip granola bars. They’re not only delicious and satisfying, but they also offer a nutritious boost without sacrificing flavor. These bars are my secret weapon for busy mornings, after-school snacks, and even as a quick dessert. The best part? They’re surprisingly easy to make, requiring minimal ingredients and preparation time. This recipe perfectly balances the need for a wholesome snack with the convenience demanded by my hectic lifestyle. Forget store-bought granola bars packed with artificial ingredients and unnecessary sugars – these homemade bars are a game-changer.

The beauty of this recipe lies in its versatility. You can easily customize it to suit your preferences and dietary needs. Feel free to experiment with different types of nuts, seeds, and dried fruits. Instead of chocolate chips, you could add dried cranberries, chopped apricots, or even a sprinkle of cinnamon. The possibilities are endless! I’ve personally found that the addition of quinoa adds a delightful nutty flavor and a significant boost of protein and fiber, making these bars incredibly filling and satisfying. The combination of chewy oats, crunchy nuts, and sweet chocolate chips creates a delightful textural experience that keeps my kids coming back for more. It's a win-win – a healthy snack they actually enjoy!

Beyond their convenience and deliciousness, these granola bars also provide a healthy dose of essential nutrients. Quinoa is a complete protein, meaning it contains all nine essential amino acids. This makes it a fantastic addition to any diet, especially for those who are active or trying to maintain a healthy weight. The oats provide fiber, which aids digestion and helps keep you feeling full longer. The nuts and seeds contribute healthy fats and antioxidants, while the chocolate chips offer a much-needed indulgence without the guilt. Making these bars at home allows me to control the ingredients and ensure that my family is consuming a wholesome and nutritious snack, free from artificial additives and preservatives.

I often prepare a double batch on the weekends and store them in an airtight container in the pantry. This ensures that I always have a readily available snack on hand for my kids, and even myself! They’re perfect for packing in lunchboxes, tossing in a gym bag, or simply grabbing for a quick energy boost. The recipe is straightforward enough that even my older kids can help with the preparation, turning it into a fun family activity. The process of making these bars is as enjoyable as the end result, making them a perfect addition to our busy week.

These granola bars are a testament to the fact that healthy eating and busy schedules don't have to be mutually exclusive. With a little planning and a simple recipe, you can create delicious and nutritious snacks that fuel your family and make even the busiest days a little bit easier. So, next time you're looking for a quick and healthy snack that everyone will love, give these Quinoa and Chocolate Chip Granola Bars a try. You won't be disappointed!

Step-by-step

    • Preheat oven to 325 degrees F and spread quick oats, quinoa, steel cuts oats and almonds on a large rimmed baking sheet.
    • Bake for 10 - 15 minutes or until lightly brown, stirring occasionally.
    • Remove from the oven, transfer to a large mixing bowl and let cool completely.
    • Stir in flax seed, chocolate chips and salt into cooled oats.
    • In a medium bowl, lightly beat the egg whites, add brown rice syrup/honey and coconut oil.
    • Mix well to combine, pour over the dry ingredients and mix well again.
    • Line 9 x 13 baking dish with parchment paper and spray with cooking spray.
    • Transfer mixture into the baking dish and using spatula or wet hands press it firmly. You have to press really well for the bars to hold together!
    • Bake for 30 minutes, remove from the oven and let cool completely.
    • I usually let the bars cool in the pan for an hour and then, holding by the parchment paper flaps, transfer on a cooling rack for another hour or so.
    • Cut into 16 bars.
