Step-by-step

    • Sauté carrot, celery, and onion in butter until softened.
    • Add water, potatoes, and chicken bouillon. Boil until potatoes are almost tender (5-7 minutes).
    • Add kielbasa and sauerkraut. Bring to a boil, then simmer for 5 minutes or until potatoes are tender.
    • Remove 1 cup of cooking liquid and 1/2 cup of potato chunks. Mash the potato chunks and mix with sour cream. Return the mixture to the soup.
    • Heat through and season to taste.
