My Delicious Banana S'mores Loaf

The Unexpected Delight of Banana S'mores Loaf

As a busy working mom, finding time to bake is a luxury, not a given. But when I stumbled across this Banana S'mores Loaf recipe, I knew I had to give it a try. I’m not a professional baker by any stretch of the imagination; my baking skills are more "enthusiastic amateur" than anything else. Yet, this recipe was surprisingly easy, even on a weeknight after a long day at the office and dealing with the kids' homework and extracurriculars. The result? A loaf cake that was so unbelievably delicious, it disappeared within hours. Seriously, it was gone faster than you could say "s'mores."

The best part? It's a fantastic combination of textures and flavors. The moist banana bread base provides a comforting sweetness, while the crunchy graham cracker crumbs and gooey marshmallow topping add a fun textural contrast and a touch of childhood nostalgia. The dark chocolate drizzle brings a sophisticated, slightly bitter note that balances out the sweetness perfectly. It's rich, it's decadent, and it's surprisingly simple to make. The ingredients are readily available in most supermarkets, making it a perfect treat for any occasion, whether it’s a weekend brunch, a mid-week pick-me-up, or a special dessert for a gathering. I served it at my book club last month, and it was a complete hit - I didn’t get to try it past the first slice!

What sets this Banana S'mores Loaf apart from other banana bread recipes is its delightful twist on a classic campfire treat. The addition of marshmallow fluff and a rich chocolate drizzle transforms a humble loaf cake into something truly special. The aroma alone is enough to make your mouth water – it’s that irresistible combination of warm banana, melted chocolate, and toasted marshmallow that evokes feelings of cozy evenings and happy memories. And the best part? It’s easily adaptable. Feel free to experiment with different types of chocolate, or add nuts or other dried fruits to the batter for extra flavor and texture. The possibilities are endless!

I love that this recipe requires very little prior baking experience. It's the perfect recipe to bake with kids, offering a fun way for them to participate in the kitchen and learn some basic baking skills. Even with my hectic schedule, I've managed to whip this up several times, and every time it's met with enthusiastic approval. This banana bread isn't just a dessert, it's a conversation starter, a crowd-pleaser, and a guaranteed way to bring a smile to everyone's face. It has quickly become a staple in my home and a recipe I’ll be making again and again.

So, whether you’re a seasoned baker or a complete novice, this Banana S’mores Loaf is a must-try. It's the kind of recipe that will leave you feeling proud of your baking abilities, even if those abilities are still developing. It’s also unbelievably comforting and satisfying. Prepare to be amazed by how simple it is to create something so incredibly delicious.

Step-by-step

    • Preheat oven to 350F, spray a regular size loaf pan with some cooking spray.
    • In a bowl whisk together your egg and egg whites, stir in your brown sugar and mix well.
    • Mix in banana, apple sauce and vanilla.
    • Stir in flour, baking powder and soda and crushed graham crumbs but leave 1 Tbsp aside for topping, I crush mine the old fashioned way, in a small zip lock and use a heavy glass.
    • Mix well then fold in your chocolate chips, pour batter out into your loaf pan.
    • Bake in oven for 45 minutes.
    • Let cool for 30 minutes then remove loaf from tin.
    • Melt your marshmallow fluff in microwave for approx 30 seconds, it will rise then spread quickly over your loaf, then melt your chocolate in a small dish, I do 35 second intervals turning each time til melted.
    • Drizzle over loaf then sprinkle your remaining graham crumbs over top.
    • Cut into 10 equal pieces.
