Mixed Green Salad with Avocado Dressing
As summer is coming to an end, at least in the Northern Hemisphere, I could not help myself but to prepare one more summer salad. My family is a bit tired of my usual vinaigrette. The search for something new and exciting brought me to so many wonderful recipes where plain Greek yogurt was used. The recipe I am sharing, Mixed Green Salad with Avocado Dressing, is a combination of two of our favorite ingredients: avocado and Greek Yogurt. Fresh, light and delicious. The recipe yields close to 2 cups and it stores well in the refrigerator. Perfect with plain green salad alongside roasted chicken. I do hope you will enjoy it as much as we did. Bon Appetit!

Mixed Green Salad with Avocado Dressing

A Simple Summer Salad That's Anything But Simple

Summer is winding down, and while I usually crave heartier meals as the weather cools, there’s still a part of me that clings to those light, refreshing summer salads. My family, however, has started to show signs of vinaigrette fatigue. They’re not exactly adverse to my culinary creations, but let's just say the enthusiasm has waned a bit with my usual go-to salad dressings. I, on the other hand, have a deep love affair with vinegar, which probably explains their less-than-thrilled expressions when faced with another sharply vinegary salad. So, I embarked on a quest for a new, exciting salad dressing, something that would re-ignite their love for my salads.

My journey led me to a treasure trove of recipes online featuring the unexpected star: plain Greek yogurt. The possibilities seemed endless! I spent hours browsing, captivated by the creamy potential of this versatile ingredient. I got sidetracked, lost in a whirlpool of culinary inspiration, but finally landed on this winner: a mixed green salad with a creamy, dreamy avocado dressing. It's incredibly simple yet surprisingly elegant, combining two of our absolute favorite ingredients. The avocado adds richness and creaminess, while the yogurt provides a tangy counterpoint that perfectly balances the richness of the avocado.

The best part? This salad is incredibly versatile. It's a perfect side dish for grilled chicken or fish, a light lunch on its own, or a refreshing addition to a summer barbecue. It also makes a great meal prep option. The dressing keeps well in the refrigerator, allowing you to prepare it ahead of time and quickly toss together the salad when you're ready to eat. The combination of fresh greens, creamy avocado dressing, and the subtle crunch of radishes is simply divine. It's a celebration of fresh, seasonal ingredients, and it always leaves us feeling satisfied and energized. And the best news for my family is, this salad dressing is a delicious change of pace! Let me tell you, they were thoroughly impressed with this one.

Beyond the Recipe: A Celebration of Simple Pleasures

This salad isn't just about the ingredients; it's about the experience. It's about taking a moment to savor the taste of summer, to appreciate the simple things in life. It's about sharing a meal with loved ones, creating a moment of connection around a beautifully presented dish. For me, cooking is more than just preparing food; it's a way to express love and care. I love the feeling of satisfaction that comes from creating something delicious and nourishing for my family, and seeing their happy faces when they enjoy my creations is truly rewarding. It's in these moments of shared joy that the magic of home-cooked meals truly shines. This salad, with its fresh, vibrant flavors and simple elegance, is a reflection of that sentiment, a testament to the beauty found in everyday simplicity. The salad is easy to make, but the impact is beyond measure.

Tips and Variations:

  • Add some crunch: Toasted nuts or seeds, like sunflower seeds or slivered almonds, would add a delightful crunch to this salad.
  • Spice it up: A pinch of red pepper flakes in the dressing adds a subtle kick.
  • Get creative with greens: Feel free to experiment with different types of greens. Baby spinach, arugula, or romaine lettuce would all work wonderfully.
  • Make it a meal: Add grilled chicken, shrimp, or chickpeas to make this salad a more substantial meal.
  • Customize your cheese: Feta cheese, goat cheese, or even crumbled blue cheese would also be delicious additions.
