    • Combine pepper, salt, cayenne, mustard, cumin, and paprika in a bowl and massage into the pork until completely covered.
    • Place pork in a deep tray or dish and fill 1/3 up the side of the pork with apple juice. (Do not pour on top of the meat, as it will wash off the rub.)
    • Allow to sit for a few hours before cooking.
    • Cover the bottom of the crockpot with 1 of the sliced onions and place pork on top.
    • Cover the pork with the 2nd sliced onion.
    • Pour juice from the refrigerated container around the pork.
    • Cook on low for 10 hours.
    • Remove pork from the crockpot, allow it to cool, and shred with forks. Pick out the bone and excess fat.
    • Discard juice, drippings, and onions from the crockpot, then return the shredded pork and add your favorite BBQ sauce.
    • Serve on a fresh, bulky roll with coleslaw.
