Raspberry Lemonade Mocktail: A Refreshing Summer Treat

My Go-To Summer Quencher: Raspberry Lemonade Mocktail

As a busy fitness model, finding healthy and delicious recipes that fit my lifestyle is crucial. This Raspberry Lemonade Mocktail has become my absolute go-to drink for those hot summer days. It’s incredibly refreshing, naturally sweet, and completely guilt-free – a perfect combination for someone always on the go. I first tasted something similar at a trendy juice bar, and I was determined to recreate it at home, tweaking it to fit my paleo and keto preferences. The result? This amazing, vibrant, and super easy mocktail.

What I love most about this recipe is its versatility. You can easily adjust the sweetness to your liking, using stevia, a little honey, or even a touch of agave nectar. I personally prefer stevia for its low-carb count and clean sweetness. The beauty lies in the balance of tart lemons and limes, the sweetness of the raspberries, and the refreshing fizz of sparkling water. It’s the perfect beverage to sip poolside, enjoy after a challenging workout, or simply savor during a quiet evening. Plus, it's incredibly hydrating, which is especially important for maintaining energy levels and keeping my body performing at its best.

The preparation is incredibly simple. I usually prep the ingredients the night before for even easier morning or afternoon enjoyment. Just imagine: you wake up, the sun is streaming through your window, and this delicious, homemade mocktail is ready and waiting to quench your thirst. This isn't just a drink; it’s a little piece of summer happiness in a glass. The bright pink hue is just as inviting as the taste, making it the perfect addition to any summer gathering, or a lovely treat to enjoy all by yourself. It’s a delicious and healthful way to stay hydrated and satisfied without the extra calories or guilt. I often use frozen cranberries instead of ice to make the drink even more visually appealing and add an extra burst of flavour.

Beyond its taste and convenience, this recipe also offers a chance to get creative. Feel free to experiment with different berries. Strawberries, blueberries, or a mix of your favorites could work wonderfully. You can even muddle some fresh mint leaves into the mix for an extra aromatic layer. This mocktail is so adaptable and enjoyable that it's become more than just a refreshing drink; it's a joyful part of my daily routine, and I hope it will be for you too.

Ingredients:

  • 2 cups fresh raspberries
  • 2 fresh lemons
  • 1 fresh lime
  • 1 pinch stevia powder or drops
  • 2 sprigs fresh mint
  • 3 cups filtered water
  • 3 cups sparkling mineral water
  • 2 cups cranberries (for ice) or packaged ice cubes

Step-by-step

    • Peel the skins off the lemons and limes and wash the berries and mint stems.
    • Add 2 cups of berries with the lemons and limes and a pinch of stevia to the blender with just 1 cup of the water to get it going.
    • Blend extremely well until the berries are very well blended.
    • Add remaining filtered water and blend well, adding stevia to taste. It should be a bit sweet because you have yet to dilute it with the mineral water.
    • Pour over packaged ice cubes (they don't melt in your drink) or frozen cranberries and mint sprigs into a nice carafe/jug.
    • Add sparkling water and stir.
    • Add any sweetness needed to taste.
    • Enjoy!
