This is a recipe my mother-in-law uses but I could not find anywhere in a cookbook. I finally found this on the Food Network Website, courtesy of Colette Peters. It is a light but very sweet icing that is great on most cakes.

As a housewife, I know the importance of simple and delicious recipes. This Basic Buttercream Icing is one of my go-tos for cakes and cupcakes. It's easy to make and always turns out perfectly. The icing is light and fluffy, with just the right amount of sweetness. It's the perfect topping for any cake, but I especially love it on chocolate cake. If you're looking for a foolproof buttercream icing recipe, this is the one for you. It's guaranteed to impress your family and friends!

What I love most about this recipe is that it's so versatile. You can use it to frost cakes, cupcakes, or even cookies. It can also be used as a filling for cakes or pastries. And because it's made with just a few simple ingredients, you can customize it to your liking. For example, you can add different flavors of extract to create different flavor combinations. You can also add food coloring to create different colors. The possibilities are endless!

Step-by-step

    • Combine all ingredients in a large mixing bowl and mix at slow speed until smooth.
    • If stiffer icing is needed, or if the weather is very warm, add a little extra sugar.
    • This recipe produces enough icing to cover a 9x13 sheet cake or 2 9 inch layer cakes.
