I remember the first time I made this dish. I was in the middle of a kitchen remodel and didn't have access to my stove or oven. I was craving something hearty and comforting, so I decided to try making chicken cacciatore in my slow cooker. I'm so glad I did, because it turned out to be one of the best meals I've ever made.

This dish is incredibly easy to make, and it's packed with flavor. The chicken is tender and juicy, and the sauce is rich and flavorful. I love serving it over hot cooked rice, but it would also be great with pasta or mashed potatoes. If you're looking for a delicious and easy weeknight meal, I highly recommend giving this recipe a try.

Step-by-step

  • Place broth, wine, mushroom, onion, green pepper, undrained tomatoes, garlic and oregano in the bottom of the slow cooker. Stir to combine.
  • Rinse chicken breasts in cold water and trim fat, pat dry with paper towel. Season well on both sides with salt and pepper.
  • Place chicken on top of tomato mixture. Cook on low 7 hours or until chicken is cooked through.
  • Serve over hot cooked rice.
