My Easy Crock Pot Mac and Cheese: A Weeknight Winner

As a busy working mom, finding time to cook a delicious and satisfying meal can feel like a Herculean task. Weeknights are a blur of school pick-ups, homework battles, and the ever-present mountain of laundry. But even amidst the chaos, I refuse to let dinner be another casualty of the time crunch. That's why I've become obsessed with crock pot recipes – especially this unbelievably creamy and comforting crock pot mac and cheese.

This recipe is my go-to weeknight meal. It's so simple, even on my busiest days I can throw it together in minutes. The best part? It’s hands-off! I simply toss everything into the crock pot in the morning, and by dinnertime, a warm, cheesy, and incredibly satisfying meal is ready and waiting for my family. No last-minute scrambling, no stressful dinner prep. Just pure, unadulterated deliciousness. The creamy texture is simply divine, and the blend of cheeses creates a flavor explosion that leaves everyone craving more.

I've experimented with different types of pasta, and personally, I prefer shells. They have the perfect shape to capture all that luscious cheese sauce. But feel free to experiment! Bowties, rotini, even penne would work wonderfully. Don't be afraid to personalize this recipe to your liking. Adding different types of cheese is another great way to add some personality to your mac and cheese. I've tried everything from a classic cheddar blend to a sharp white cheddar, and even a little bit of pepper jack for a bit of a kick.

The beauty of this crock pot mac and cheese recipe lies not only in its ease but also in its versatility. On days when I feel a bit more ambitious, I’ll add some cooked bacon or chopped ham for extra protein and flavor. Sometimes, I'll stir in some roasted vegetables like broccoli or cauliflower for a healthier twist. Other times I simply opt for a classic sprinkle of paprika for a touch of smokiness. The possibilities are endless!

Tips and Tricks for Crock Pot Perfection:

  • Don't overcook the pasta: The pasta will continue to cook in the crock pot, so it's important not to overcook it initially.
  • Use good quality cheese: The flavor of your cheese will directly impact the flavor of your mac and cheese. Invest in a good quality cheese for the best results.
  • Stir occasionally: While this recipe is largely hands-off, stirring occasionally will help ensure that the cheese melts evenly and that the sauce doesn't stick to the bottom of the crock pot.
  • Adjust seasoning to taste: Don't be afraid to adjust the salt and pepper to your liking. You can also add other seasonings like garlic powder, onion powder, or even a dash of cayenne pepper for a little heat.
  • Get creative with toppings: Once the mac and cheese is cooked, get creative with your toppings! Breadcrumbs, bacon bits, chopped green onions, and even a sprinkle of fresh herbs can elevate this dish to the next level.

Enjoy!

Step-by-step

    • Turn your crock pot on high, drop in the butter.
    • Once it's soft and melty (not completely melted), pour your uncooked pasta in and stir to coat. That dry pasta soaks it up!
    • Dump in the evaporated milk, diced tomatoes, and water. Salt and pepper. Stir.
    • Add all your cheese. Stir.
    • Turn your crock pot to low, and let the cheeses melt for about an hour.
    • Stir to blend into a cheesy sauce.
    • Top with paprika, cover and cook for 2 more hours.
    • Enjoy!
