Step-by-step

    • Make dough: flour, breadcrumbs, lemon rinds, sugar, baking powder, salt, vanilla sugar, melted butter. Mix in a bowl, add egg yolks, sour cream, until greasy dough forms. Refrigerate for 2 hours.
    • Prepare stuffing: mix cheese, sour cream, yolks, sugar, vanilla sugar. Soak raisins in plum brandy or rum until swell up. Make "snow" from egg white and add to stuffing, along with raisins and lemon rinds.
    • Roll dough into thin sheet. Cover cake pan bottom with butter and dough sheet. Pour cheese stuffing on dough. Roll remaining dough into thin sheet and put over cheese, covering it. Poke 10 holes with a fork on the cover.
    • Preheat oven to 170°C and bake for 50-60 minutes or until light golden.
