As a busy housewife, I'm always looking for easy and delicious recipes that I can share with my family. These roll-out cookies are a perfect example. They're simple to make, but they always turn out perfectly. And best of all, they're a huge hit with my kids and husband.

The key to these cookies is to use high-quality ingredients. I like to use unsalted butter and real vanilla extract. I also use a combination of granulated sugar and brown sugar to give the cookies a slightly caramelized flavor. Once you've mixed the dough, it's important to not overwork it. Just mix until the ingredients are combined, then divide the dough in half and roll it out. Cut out the cookies and bake them on a parchment-lined baking sheet. They'll be ready in just 6-7 minutes!

Step-by-step

    • Preheat oven to 400F.
    • In a mixing bowl, cream butter with sugar until light and fluffy.
    • Beat in egg and extracts.
    • Mix flour, baking powder and salt; add to butter mixture 1 cup at a time, mixing after each addition.
    • Do not chill dough.
    • Divide dough into 2 balls.
    • On a floured surface, roll each ball into a circle approximately 12 in. wide and 1/8 in. thick.
    • Dip cookie cutter in flour before each use.
    • Bake cookies on ungreased cookie sheet 6-7 minutes or until cookies are lightly browned.
