Step-by-step

    • About 15 minutes before you want to start cooking, rinse and pat dry your chicken breasts. Place them in a bowl, season with salt and pepper, and pour the 1 cup of salsa verde over it. Allow to marinade for about 10 minutes at room temperature.
    • After the chicken has marinated, heat 2 tablespoons of olive oil over medium high heat in a large saute pan. Sear your chicken until it is cooked through. (What I usually do is I sear it so that there is a nice crusty brown on both sides. Then I cut into the thickest part of the chicken and check it out.. it usually is still a little pink so i turn the heat down to low
    • Once the chicken is cooked, set it aside and cover with foil to keep it warm. Now time to saute your veggies! Make sure all of your veggies are chopped and ready to go.
    • In a large saute pan over medium-high heat, heat 2 tablepsoons of olive oil. Once the olive oil gets hot, saute onions, garlic and poblanos for about 3-5 minutes or until tender.
    • Now add the mushrooms, the juice of 1 lime, and season with a little bit of salt and pepper. Saute this mushroom mixture for about 4 more minutes. After that, add the chopped cilantro and about 2 tablespoons of the salsa verde you used marinating the chicken. Stir that in and let it cook on low for a minute or 2.
    • To serve, place your cooked chicken breast on a plate. Scoop a heaping spoonful of the veggie saute mixture over the chicken breast, and garnish with a little extra fresh chopped cilantro.
