Eggnog Cookies: A Festive Holiday Treat

My Festive Eggnog Cookies: A Holiday Baking Adventure

The holiday season is upon us, and what better way to celebrate than with a batch of warm, delicious cookies? This year, I decided to experiment with a recipe that combines the comforting flavors of eggnog with the satisfying crunch of a homemade cookie. The result? These delightful Eggnog Cookies, perfect for sharing with loved ones or enjoying a quiet moment with a cup of tea. I'm a busy working mom, juggling a demanding career and the never-ending to-do list of family life. Finding time for baking is a luxury, not a given. But these cookies are surprisingly quick and easy to whip up, even on a hectic weeknight. The simplicity of the recipe belies the richness of flavor, proving that sometimes the best things in life are the easiest to achieve.

The aroma that wafted through my kitchen as these cookies baked was pure magic—a blend of warm spices and creamy eggnog. My children, usually picky eaters, couldn’t resist sneaking a few warm cookies right off the baking sheet. Their delighted expressions were the best reward. These cookies are surprisingly versatile, too. You can easily adjust the sweetness to your liking, swapping out sugars or using alternative sweeteners like honey. The base recipe provides a solid foundation for experimentation; feel free to add chocolate chips, nuts, or dried cranberries for an extra touch of festivity. The possibilities are endless!

One of my favorite aspects of this recipe is its ability to adapt to various dietary needs. The use of oat flour makes it naturally gluten-free. Adjustments to sweeteners make it possible for those watching their sugar intake. Even the use of low-fat eggnog helps to keep it relatively light. However, I won't lie, these cookies are not strictly "diet" cookies – they are still rich and indulgent. But for special occasions, a little indulgence is totally acceptable. After all, holiday baking is about more than just following a recipe; it's about creating memories and sharing joy. Baking these cookies became a little ritual for me. It’s a chance to switch off from the chaos of daily life and focus on the simple pleasure of creating something delicious, something to share, something to make the holiday season a bit brighter.

Ingredient Notes: The recipe calls for a variety of ingredients, easily found in most grocery stores. I like to use oat flour for its wholesome goodness. For the sweetener, I personally find a mix of coconut palm sugar and stevia works best. But feel free to experiment with what best suits your taste. The eggnog, of course, is the star of the show, providing that wonderful festive flavor. I always like to use a good quality eggnog. You can adjust the spices to your own preference, adding a little more nutmeg or cinnamon if you prefer a stronger flavor profile. Don’t be afraid to experiment!

Tips and Tricks: Here are a few helpful tips to ensure your cookies come out perfectly. Make sure to flatten the cookies before baking; this helps them cook evenly and prevents a doughy center. A wet hand is your friend for this step – believe me. Cool the cookies completely on a wire rack before storing. This allows them to harden properly and prevents sticking. If you prefer a crispier cookie, bake them for a couple of extra minutes. And remember, even baking is an art. It’s ok if some cookies don't look exactly perfect; the taste is what matters most.

Storage: Store the cookies in an airtight container at room temperature for a few days, or in the refrigerator for longer storage. You can even freeze them for future enjoyment. Honestly, I find that storing them in an open container for a while lets the glaze set properly. The cookies stay fresh for a while in the fridge too, so it’s all up to your preference.

Beyond the Recipe: This recipe is more than just instructions; it’s a small piece of holiday magic. It’s a chance to connect with loved ones, create memories, and enjoy the simple pleasures of baking. So gather your ingredients, put on some holiday music, and let the aroma of warm spices fill your home. These Eggnog Cookies are a wonderful way to spread holiday cheer, one cookie at a time. Whether you're a seasoned baker or a complete novice, this recipe is sure to bring a smile to your face and warmth to your heart.

Step-by-step

    • Preheat your oven to 300 degrees F.
    • In your large mixing bowl, mix together all your wet ingredients and sugars (coconut palm sugar, stevia, eggnog, greek yogurt, vanilla & egg whites).
    • Once that's mixed, add in the dry ingredients (nutmeg, oat flour, baking soda), and mix until blended.
    • Drop a teaspoon full of cookie dough (I used a cookie scoop) onto a parchment lined cookie sheet.
    • Flatten each cookie with a wet hand (or else it will stick to your hand) to flatten them out. The thinner the better as they don't flatten at all in the oven. If you don't flatten them out, they might still remain doughy in the middle.
    • Bake for 14 min until just golden around the edges. Will remain very light on top.
    • Cool and store in an open container to let the glaze harden.
    • When stored in an airtight container, the glaze will become wet. A good idea would be to place them in the fridge in an airtight container after a day to keep them fresher longer. Can also be frozen.
