Cassie's Comforting Chicken & Noodles: A Weeknight Winner

As a busy working mom, I'm always on the lookout for recipes that are both delicious and easy to prepare. This Crock-Pot Chicken and Noodles recipe has become a staple in our home, a true lifesaver on those hectic weeknights. The beauty of this dish lies in its simplicity and the incredible flavor it delivers with minimal effort. The slow cooking process in the Crock-Pot renders the chicken unbelievably tender and juicy, infused with the rich flavors of the broth and seasonings. The noodles absorb all that deliciousness, creating a hearty and comforting meal the whole family will adore.

I love that this recipe is so adaptable. Sometimes I use canned chicken and cream of celery soup as a shortcut, while other times I opt for fresh ingredients. Feel free to experiment with different vegetables – carrots, peas, or even some spinach would be delicious additions. The best part is that you can largely prepare this meal in advance. Simply throw everything into the Crock-Pot in the morning and let it simmer away while you attend to your day. By the time dinner rolls around, a warm, comforting, and utterly delicious meal awaits, ready to nourish your family.

The aroma alone is enough to draw everyone to the table. My children, who can be notoriously picky, always clean their plates when this dish is served. It's a testament to the irresistible combination of tender chicken, perfectly cooked noodles, and a creamy, flavorful broth. The simple seasonings allow the natural flavors of the chicken and broth to shine through, creating a truly satisfying and wholesome meal. It’s not just a dinner; it's a hug in a bowl, perfect for chilly evenings or a busy weeknight.

Beyond its ease and deliciousness, this recipe offers practicality and versatility. Leftovers are fantastic the next day, perfect for a quick lunch or a satisfying supper. The meal is also easily doubled or tripled for larger gatherings or meal prepping. I often make a double batch on the weekend and freeze portions for those evenings when time is particularly tight. With minimal effort, this recipe provides a nutritious and delicious meal that consistently pleases even the pickiest of eaters. It's a true testament to the power of simple, well-executed cooking.

Ingredients that Make it Special:

The success of this dish relies on the quality of its ingredients. I prefer using fresh chicken breasts when possible, but canned chicken offers a convenient alternative. The broth is key; a good-quality chicken broth adds depth and richness to the entire dish. Don't be afraid to experiment with different types of noodles – egg noodles work perfectly, but you could try other shapes or even different types of pasta. The butter adds a lovely richness to the broth, and the bouillon enhances the chicken flavor. Adding a touch of fresh parsley at the end brightens the flavors and gives it a beautiful presentation.

Step-by-step

    • Salt & pepper chicken breasts.
    • Place in the bottom of Crock Pot.
    • Spoon soup over the chicken.
    • Cut butter into several pats and place pieces evenly over soup.
    • Whisk the bouillon with the broth.
    • Pour over soup.
    • Place lid on the Crock Pot and turn to low. Cook for 6 hours.
    • Remove chicken and tear into pieces.
    • Add back to pot.
    • Now add noodles; if adding veggies add now. Cook for another 2 hours or until noodles are desired tenderness. I stir a few times during the last 2 hours. (You may want to add more broth to thin out at the end of cooking, as the homemade noodles thicken the broth, which we like.)
    • Sprinkle with parsley and mix in if using at the end of cooking.
    • Salt & pepper, if needed, and serve. Yum!
