BBQ Chicken Bacon and Ranch Wonton Cups: A Quick and Tasty Weeknight Meal

Life as a working mom is a whirlwind. Between early morning school runs, long work days, and the never-ending to-do list, finding time to cook a healthy and satisfying dinner often feels impossible. That's why I'm constantly on the lookout for recipes that are quick, easy, and delicious – recipes that won't leave me feeling stressed and overwhelmed in the kitchen. These BBQ chicken bacon and ranch wonton cups are exactly that. They’re a lifesaver on those busy weeknights when I need a meal that’s both impressive and effortless.

The beauty of this recipe lies in its simplicity and versatility. I often prepare the chicken ahead of time – slow cooking it in the crock-pot is my go-to method. This way, I have pre-cooked, shredded chicken readily available in the fridge, perfect for meal prepping and assembling this dish in a flash. The combination of smoky BBQ sauce, crispy bacon, and creamy ranch dressing creates a flavor explosion that’s hard to resist. The wonton wrappers provide a crispy, satisfying base that holds the delicious filling perfectly. And the best part? The entire recipe comes together in under 30 minutes, leaving me with more time to focus on other things – like spending quality time with my family.

Why I Love This Recipe:

  • Quick and Easy: Perfect for busy weeknights.
  • Delicious Flavor Combination: The smoky BBQ, crispy bacon, and creamy ranch are a match made in heaven.
  • Versatile: You can easily adjust the ingredients to your liking. Swap out the chicken for another protein, add different vegetables, or experiment with different sauces.
  • Kid-Friendly: My kids absolutely devour these wonton cups. It's a sneaky way to get them to eat their vegetables (if you choose to add some!).
  • Make-Ahead Potential: Preparing the chicken in advance saves a ton of time on busy evenings.

Tips and Variations:

  • Spice it up: Add a pinch of cayenne pepper or a dash of your favorite hot sauce to the filling for a little kick.
  • Add some veggies: Chopped onions, bell peppers, or even spinach would be delicious additions to the filling.
  • Change up the cheese: Experiment with different types of cheese, such as cheddar, Monterey Jack, or pepper jack.
  • Make it a meal prep staple: Prepare a large batch of the filling and store it in the refrigerator for quick and easy meals throughout the week.

These BBQ chicken bacon and ranch wonton cups are more than just a recipe; they're a testament to the fact that delicious, satisfying meals don't have to be complicated or time-consuming. They're a perfect example of how a busy mom can create a restaurant-quality meal without spending hours slaving away in the kitchen. So, the next time you're short on time but craving a flavorful and comforting dinner, give this recipe a try. You won't be disappointed!

Beyond the Recipe:

This recipe has become a regular in our household. It's versatile enough to be adapted for different occasions. On a casual weeknight, I serve it as is. For a slightly fancier get-together, I might garnish it with fresh herbs or a drizzle of extra ranch dressing. It's also a great option for potlucks or parties; the individual portions make it easy to serve and transport.

I hope this recipe brings you as much joy as it brings me. Remember, even in the midst of a busy schedule, there's always time for a delicious and satisfying meal. Happy cooking!

Step-by-step

    • Preheat oven to 350F, lightly spray a 12 hole regular sized muffin tin.
    • Place your wonton wrappers in muffin holes and push down.
    • In a small bowl mix your chicken, crumbled bacon, barbecue sauce and 2 Tbsp of your dressing (leave ½T aside for drizzle) mix well and then divide over your 12 wonton cups.
    • Sprinkle your cheese evenly over the 12 cups.
    • Bake in oven for 10-12 minutes, checking your wonton wrappers don't burn.
    • Remove from oven and drizzle with remaining dressing, place in a small zip lock and cut a tiny hole, you don't need much for the drizzle.
