I have made these ribs in the oven, on the grill, and in the PPC-XL. I am giving you the oven and PPC-XL versions. Personally, I like the pressure cooker version better. It is so much easier and less heat in the kitchen. Either way, they will turn out lip smackin good!

My Go-To Comfort Food: BBQ Pork Ribs

As a busy working mom, time is my most precious commodity. Weeknights are a whirlwind of school pick-ups, homework battles, and the ever-present need to get dinner on the table. That's why I rely on recipes that are both delicious and incredibly efficient. These BBQ pork ribs are my absolute go-to comfort food – they're satisfying, flavorful, and surprisingly easy to make, even on the busiest of days.

I've experimented with various cooking methods – oven-baked, grilled, and even using my trusty pressure cooker (the PPC-XL). While the grilled version is fantastic for summer evenings, the pressure cooker method takes the crown for convenience. It significantly reduces cooking time and keeps my kitchen from overheating, a lifesaver during the warmer months. But honestly, no matter how you prepare them, these ribs are guaranteed to be a crowd-pleaser. The tender, succulent pork, coated in a smoky, sweet BBQ sauce, is a perfect combination of textures and flavors that always leaves my family wanting more.

The beauty of this recipe lies in its simplicity. The ingredient list is short and easily adaptable to what you already have in your pantry. I often adjust the spices to suit my mood – sometimes a bit more garlic, sometimes a touch of extra pepper. The flexibility is what makes this recipe truly special. It's a blank canvas for culinary creativity, allowing you to personalize it to your own taste preferences. Whether you serve them as a centerpiece for a family dinner or as a casual weeknight meal, these BBQ pork ribs are a guaranteed success. They are perfect paired with some simple sides like creamy mashed potatoes or a fresh green salad.

Beyond the ease of preparation, these ribs offer a fantastic opportunity for bonding with my family. The aroma filling the kitchen as they bake is enough to make everyone excited for dinner. Often, my kids will help with the simpler tasks, like brushing on the BBQ sauce or setting the table. These small moments of shared activity create lasting memories, transforming a simple meal into a cherished family experience. It's more than just food; it's a symbol of love and togetherness, a comfort and joy that is priceless in our often chaotic lives.

I encourage you to give these ribs a try. Experiment with different BBQ sauces, add your own favorite spices, and adapt the cooking method to fit your lifestyle. Whether you're a seasoned cook or a kitchen novice, you'll find these ribs surprisingly easy to make and irresistibly delicious. So, fire up your oven or pressure cooker, and get ready to experience the ultimate in comfort food perfection. The tender, juicy meat will fall off the bone, and the sweet and smoky flavor will transport you to a place of pure culinary bliss. You might just discover your new favorite weeknight meal too!

Remember, cooking shouldn't be a chore; it should be a joyful experience. This recipe is a testament to that belief, offering a simple, delicious, and memorable meal that's perfect for families, friends, and anyone who appreciates the comfort and satisfaction of a truly well-prepared dish. And don't be afraid to get creative! Add some extra vegetables or different sides to make it a fully balanced and personalized meal. Enjoy!

Step-by-step

    • In a 5-qt. saucepan, add the ribs and enough water to cover them about a half inch. Place the pan on a medium-high burner and bring to a boil. Reduce the heat to low and simmer for about 45 minutes to 1 hour, or until fork tender.
    • Preheat the oven to 350 degrees.
    • Transfer the ribs to a 9"x13" baking dish coated with cooking spray. Season with the garlic, ginger, salt, and pepper. Brush the ribs with the BBQ sauce.
    • Bake for 15 minutes.
    • Turn the ribs and add another coat of BBQ sauce to the ribs. Place the ribs back in the oven and bake for another 10-15 minutes.
    • Serve hot.
    • PPC-XL:

    • Press the Meat/Chicken button and the Time Adjust button to get a total of 20 minutes.
    • When the timer goes off, release the pressure.
    • Transfer the ribs to a 9"x13" baking dish coated with cooking spray. Brush with a coating of BBQ sauce.
    • Preheat the oven to 350 degrees.
    • Place the ribs in the oven and bake for 15-20 minutes.
    • Serve hot with extra sauce if desired.
