    • In a medium size bowl combine the potato you scooped out with the chopped jalapeño, butter, sour cream, salt, pepper and 1/2 cup of the Chipotle Gouda cheese. Stir until just combined.
    • Spoon the mixture back into the potato skins.
    • Top with the remaining 1/2 cup of Chipotle Gouda cheese.
